FRIED YELLOW SQUASH PATTIES

- INGREDIENTS & OTHER INFO:
8 med yellow squash, shredded
1 onion, shredded
1 1/2 tbsp salt
1 cup flour
1/2 cup cornmeal
1 egg, beaten
1 cup shredded Cheddar cheese
black pepper
vegetable oil
**Place the squash & onion in a colander, sprinkle with salt & drain after about 30 minutes, until no longer wet. Mixc with all other ingredients & drop by spoonfuls inot hot oil & cook about 3 mnutes each side until golden brown.
Very good served with sour cream & green onions!

I may cook this tonight. But I will have to shred mine with a fork. Patty my husband loves all the recipes I’m getting from you and Mary. But, all these gadgets and cooking pots . He’s not happy. 😂😂.
That is funny! Do you have a food processor or mini chopper? You could use that as well or use a hand grater. Did you make them and if so how were they?

Bonita they were absolutely addictive. I made the rest of them the next day and garnished them with sour cream and green onions...so good. Dont pass up making these.

I used my Kitchenaid Shredder attachment but you could use a food processor as well. I really would highly recommend you freezing it a bit before shredding. You can also hand grate it on a grater but I think freezing it slightly is important. Thanks for watching Debra!
