I agree with others. Drop the pellet grills. Unless it's a fun and unique grill use the Joe. Nothing you can't do on it. Skip the gas grill too. A true pitmaster should use lump charcoal or wood. Still love you guys.

This is a rift on a Porchetta recipe. For thick pieces of pork belly, cut it in half but leave the end attached to get a longer piece to roll. Rosemary, sage, thyme and lemon rind are more traditional to add to the centre.
