    Here in Brazil we call this beauty 'torresmo de rolo' wich means (in free translation), pork belly roll.
    With beer and cachaça... heaven!!

    How could i preper this in the oven?
    Maybe 20 minutes on high heat for flavor and then cover with aluminium and slowley roast?

    I agree with others. Drop the pellet grills. Unless it's a fun and unique grill use the Joe. Nothing you can't do on it. Skip the gas grill too. A true pitmaster should use lump charcoal or wood. Still love you guys.

    How about, I don't know maybe answering some of the comments questions...100% complete example of a UA-cam channel that has enough sponsors to not give a thought about answering any comments. The content of this channel is awesome.     But, how's the fat on the inside? I do like Pork Belly, but the ordinary Dutch 'speklap' is too greasy/fat for me, while if it had a long low & slow session the fat is more soft and enjoyable. What to do?

    This is a rift on a Porchetta recipe. For thick pieces of pork belly, cut it in half but leave the end attached to get a longer piece to roll. Rosemary, sage, thyme and lemon rind are more traditional to add to the centre.
