you should do a rebuild where a wheel chooses your offensive and defensive playbooks because they could change a lot about who you draft what positions to focus ect
Suggestion: what if you do a 0 overall draft only rebuild, but you're only allowed to draft players in the first round. 2nd - 7th have to be traded or the player drafted has to be traded. It would be interesting to see how you approach it, do you take number one overall or try a package for multiple firsts? I think it could be fun.
