    Wow! Everything looks fresh and fancy but I have to say the amount of olive oil you use throughout the day is exuberant. a lot of times when you are cooking oil olive oil is not necessary to make things taste good. For example when you're making the kale for dinner just skip the olive oil, you'll see them it's not necessary. I just use water instead, and flavor it with garlic onions spices herbs etc.

      +Nanna Lambert oils are not foods. you are better off getting the fat, soluble fiber and other vitamins and minerals from the whole olive rather than just extracting the oil which is a by product and 100% fat. no bueno. having a small amount of high fat nuts and seeds and things like avocado each day is healthy but a cup of straight up fat from oil is anything but.

      +Taryn Bell it is tough.. but only if you don't heath it to much and use extra virgin olive oil.. I eat healthy (a lot of vegies, nuts, advocado's,...) but don't eat meat or fish very often, I need to add oils to my food because i have a very high metabolism and I'm also very active, I need the extra calories because I burn a lot of them, but I try not to heath it

    Why is this a rich person diet?? Her diet looks great and is definitely affordable, with some adjustments. Maybe don't buy organic, and instead of matcha drink plain green tea. Make your own cereal/granola and almond milk, or use real milk instead. Everything else (chard, sweet potatoes, mushrooms, berries) are super cheap in North America, no?

      I absolutely love cooking videos and this video is awesome :)
      Just one more thing about the sea salt and the oils. Be careful with using sea salt. Unfortunatelly our seas are extremly polluted and sea salt is the worst you can possibly use (you can easily search for some articles in the internet). The normal salt is better, but best (and most expensive) is clean himalayan salt.
      Second thing: for frying the best is coconut oil because it do not oxidize while frying. So far I know it goes the same with baking because of high temperatures. Honestly, I don't always use coconut oil for frying too, because it is too "dense".

    Thank you for this video because it gives me ideas on what to cook (in a health way). I have GERD, also I am lactose intolerance and now my doctor told me that I could have diabetes. Imagine all of those things at once? I got very depressed but seen this video makes me feel that I can still enjoy food like I did before. Hope to see more what I eat in a day, so I can get more inspiration. :)

Too much salt added to one's diet can lead to excessive water retention (i.e. puffiness), high blood pressure, reduced kidney function leading to kidney disease, renal stones, and bone thinning due to the excess excretion of calcium in urine. Sea salt is no different than table salt with regards to these effects it can have on the body.

      +RawMess That's very true, but some people need salt. It's not bad for everybody. And in moderation it's fine. I lack salt so my doctors give me a salt pill and tell me to add it to all of my foods. Because of that though then I need to drink over 64 oz of water a day.

      Chipper ChelseaKay You can consume all the sodium you need in vegetables. Doctors are pill pushers. In general, they don't have very much nutritional education as it isn't a requirement. They get kick backs for prescribing medicine. But in any case, too much salt is what I was referring to, there. I certainly love the stuff myself so I have to be mindful ;O)

      It depends on the temp. Its smoke point isn't as high as say, coconut oil or ghee

    People, don't be afraid of oils! As long as they are good quality organic and cold pressed oils they are perfectly healthy for the body in moderation. You are supposed to have a good source of fat with every meal (which is what Mimi did) because fat slows down the digestion process making your body absorb the nutrients from all of the food better. And it'll keep you full longer. Healthy fat is especially needed when eating carbohydrates because it'll help slow the sugar intake. Much better for your blood sugar. Just stay away from vegetable and canola oils.

      Everything Mimi makes looks absolutely delicious. It may not seem delicious or appetizing for most people because they may not live off of a healthy diet. And the thought of people commenting that "too much Olive oil is not healthy" but what about that fast food places that we tend to go often? It's certainly more healthy to cook your own food at home then to go out to eat. And I don't understand with @redbunnyx3x... What makes you think that she stuffs her face off camera? I am positively sure that she is 100% slim as shown in the video. I am saddened to hear that the "normal people saying Normal people shit" is terribly horrific to how our society is today.       It does come to a big amount when you add the amount added to each ingredient. I just noticed this when I stopped using olive oil (or any oil) on my cooking.

    Wow.. I am so inspired by this... I mean not content wise for the food, because I eat these types of foods too, but the way i feel you are towards food... And how you deal with your foods. That's so nice. As someone trying to recover from an eating disorder this is really beautiful to see...i had such a hard time knowing what is "eating normally" because I've secretly struggled for so many years that I completely didn't know anymore plus on youtube there's alot of weird people, but when i saw this i was like "this! This is what's supposed to be eating normal!" example being : just "drizzle some olive oil" and not "measure exactly how much olive oil you put".

      +Julia Chao Hi Julia, I do use garlic and onion sometimes. I feel like if I eat them too much they give me heartburn, so I do not eat them daily.

    I like that these are fairly simple things to make. The veggies for the lunch could be cut up ahead of time if you have a shorter lunch break.

    Hi doll! Just a friendly tip there is some controversy about cooking with olive oil at high temperatures. Many experts state that because of OO's low smoking point at high temps it begins to release carcinogens. It really should be reserved for low to medium heat cooking. Or better yet use an alternative oil with a higher smoke point like avocado, grapeseed, or sunflower oil. 👍😀

      Saba H I eat almost identically to her. But I will make massive quantities of one thing, done just as quickly. Then each individual meal I just need to do one new thing (not three or four) and then gather items previously cooked. It is, actually, extremely fast that way.

    The video is staged but it's because this is the role of influencer - to create content that is appealing, beautiful and inspirational. And for me this exact video was a starting point to improve my life, to declutter and decorate my space, to change the things around me, to style my office place etc. Why to watch anything ugly and boring? We can see a lot of this in real everyday life so it's great sometimes to see anything beautiful and clean. besides, most of these things we can create ourselves

    This was ssuuuuuper healthy. I'd be s-t-a-r-v-i-n-g if all i ate all day was grilled veggies and fruit. If it were me I'd eat that lunch with a big hunk of bread with butter hahaha...Am I the only one that eats boxed cereal, bread, cookies, throughout the day?? Am I alone here? lol.

    These what I ate videos are my favorite of yours! I love how clean the editing in your videos are. I don't understand why people comment about how everything is "too perfect" in this video. Its a video?? I would hope people can realize that these videos have been edited & are set up to look perfect, as are you. & why do people care how much salt and olive oil you eat? The amount of seasoning you put is your choice. Plus, that's nothing compared to how food is prepared in restaurants. I think it's sad that people can have so much negativity about someone else's choices. The amount of salt & OLIVE OIL you used made you seem more relatable. I like my food well seasoned just like you! 😊

    Everything looks great. I'd still recommend not using olive oil at high heat because it's not stable (not about the smoking point, but oxidation). You could cook sweet potatoes without oil, or add a saturated fat like butter or coconut oil.

    really nice video again. :) I only have one question Mimi.. why arent you a vegan ?... you are actually eating so much vegan stuff and avoiding leather and annimal products in clothing (which is awesome) but you still eat stuff like fish or eggs... obviously I am vegan but this is not me pushing you to be it too... I am just very curious. thanks for the answer . i wanted to ask you this question quite a while. with all the respect to everybodys food choices .. its always good to see that you are more aware of what is going on and care about animals and inspiring other to be like it too :)

      +petra Thank you Petra. Being vegan is a huge responsiblity and decision for one to make. One needs to do proper research to get all the vital protein, vitamins, nutrients. Due to my personal health and lifestyle - being pescetarian who eats mostly a plant based diet is the lifestyle choice that works the best for me at the moment. :)
