Healthy and Delicious Black Bean Brownie Recipe

  • I struggle with weight loss verses depression. I wanted to share this recipe because it’s one of the only dessert substitutes that I have tried over the last 6 months that actually works. I have tried the cottage cheese bread and protein powder cheesecake, and countless other diet dupe recipes. All of which ended in failure. I found this recipe on Chocolate Covered Kate’s Blog and I’m happy to say I will be trying more of her recipes. I made this video back in June, and I sincerely hope to find or create other recipes that work just as well. I can also safely say this recipe was a huge hit over the holidays, and not one single guest suspected it to be a healthy dupe. Here’s the Recipe.
    Ingredients:
    1 15oz can black beans drained and rinsed well
    2 Tbs cocoa powder
    1/2 cup quick oats
    1/4 tsp salt
    1/2 cup honey
    1/4 cup coconut oil
    2 tsp pure vanilla extract
    1/2 tsp baking powder
    1/2 - 2/3 cups chocolate chips- (do not omit!)
    Preheat oven to 350 degrees Fahrenheit. Put all ingredients except chocolate chips into food processor. Blend on high one minute or until well incorporated. Stir in half of the chocolate chips and pour batter into an 8 x 8 greased pan. Sprinkle remaining chips on top. Bake for 15 to 18 minutes. Cool completely before cutting. Sometimes these come out softer than desired but they firm up when cooled. We like them with a little bit of whipped cream and a few chips on top, but they’re great plain too.

    I had no idea you could use black beans to makes brownies! They look delicious! Wow, I need to start eating better, myself. I have a long commute to work and travel almost every weekend to see my grandson, so I’m bad to just eat “convenience” food, and not taking the time to eat healthy. I laughed when Cristoff said, “do I want to know what’s in them?” 😂

      This recipe was so much better than the others I’ve tried so far. It’s been hard, not to mention more expensive to eat healthier. Then there’s also more frequent trips to the store. I’ve been having salads for lunch every day, and 2 times a week for dinners as well. It’s been a real life change, but my DR. has seen good results in my last tests so I’m gonna keep working at it. I’d like to get to a point where the crazy sugar cravings go away, but that hasn’t happened yet.

    Sounds delicious 😀 Good for you ...and your hubby LOL...for trying new things like black bean brownies. As a reformed chocoholic, i still make my husband the sweet chocolate desserts he loves but i have grown to prefer my no sugar alternatives... i make an amazing chocolate marbled banana bread sweetened with a bit of maple syrup. It's so good i no longer enjoy the sugary treats. And i can eat them guilt free 😀

      Thank you! Your chocolate marbled banana bread sounds amazing. You’ve given me hope that I won’t be ruled by the sugar one day. It’s been hard and I’m taking it one day at a time.
