To save time.
Also to not stop the cooking process temperature difference will not balance out the taste.

Long beans need to have some crunch.. So this is way it cooked... Btw raw can be eaten as well

We eat long beans row in salads and cutneys... so slightly blanced beans is totally fine in our curry
