I definitely think that there's some unethical stuff going on in the roofing industry. Prices were going up prior to 2021, but usually only once a year. When Lord Biden declares that we won't use domestic oil and shuts down our pipelines, then petroleum prices skyrocket and everything that relies on it. Now prices go up 3 - 5 times a year.
You can ask the roofer to show you the order invoice from the shingle supplier and then ask him to show you a label from the shingle bundles that get delivered to your house.
There is no shingle shortage, I live next to a storage area for Owen’s Corning and there’s literally millions of bundles on pallets at the facility.

well i am glad I put a plastic slate roof on that still looks like new 25 years later.
As an old lady, how would I ensure the right shingles are ordered and installed? If i were to raise the subject in beginning, would it possibly deter?
