Yes sure! If you take the AI course, It has a study break and you can also apply for CO-OP. It have same subjects as Software Engineering Technician or Technology for 2 semesters and after that your course will divert more into the AI. I have a friend that studied the same course. Please do study hard and try to build some projects and apply for CO-OP. To be honest. You will learn everything from this course like DSA, OOP, Full stack web dev, Quality testing, Linux Unix but not much in detail. So if you want to learn more you have to study much more outside the course as well.
Yes, Macbook is okay for most of the parts, But you have to get ready to do some extra work for linux/Unix course (You have to install linus from vmware) and also we study c# so we have to program some WInform(Windows forms). So you have to login to classApps(It is a website from centennial which lets you use windows on mac in chrome) and do coding from there. It is slow that way but Other than that, it is okay for all the subjects
