Red cabbage is so good!
Kale is more popular than sauerkraut in the north, especially in winter. Many places hold kale feasts („Grünkohlessen“) as social events.

I think one thing that bears mentioning are Pfifferlinge - Chanterelle mushrooms. They're in season around this time of year (late summer and fall) and very popular, either just roasted with butter or as part of a sauce.
They're very tasty and I personally find them to be a lot more flavourful than the button mushroom you see more commonly.
If you see Pfifferlinge as a side or as part of a main dish in a restaurant, it's usually worth ordering because you're gonna be in for a treat unless you completely hate the texture of mushrooms (they don't actually have the typical "mushroomy" taste, they're more savoury and nutty).
I love your channel. I’m in Germany right now. I had the Spatzle with cheese for lunch just yesterday. I agree with your assessment…soooo good.
I am German - how could I survive without eating pork? 😂 My favourite side dishes are Spätzle, Schupfnudeln (you can see I am from the south 😉), rice, but also Sauerkraut (sometimes the Schupfnudeln come with Sauerkraut) and, yes: bread or pretzel.
I know the Karoffelpuffer as a main course, especially according to my mum's recipe with a large grated onion in the batter and baked with butter, not oil. This makes the pancakes savoury and crispy - it's heaven on earth. I've never had anything like that in a restaurant.
Käsespätzle (or Kasspatzn in Bavarian, cheese spaetzle) are served as a main course, always with fried onions on top and usually with a small mixed salad as a side dish. Often the eyes are bigger than the stomach, because one portion fills you up very quickly. That's why some restaurants offer small and large portions.
As a German Spätzle are my favorite dish. You can make incredible meals with Spätzle. Ofc first and foremost are traditional Käsespätzle, but personally I also found I enjoy Spätzle Bolognese

Rotkohl is my favorite even though i have two different krauts in my fridge. Chicago has a lot of Eastern Europeans so in my grocery store i can get it. I need to find more red cabbage though.
Christmas time roast goose with red cabbage and brussel sprouts and chestnuts - yummy!

I am a simple guy, I like "Erbsen und Möhrchen", peas and carrots, maybe with a bit of cream or butter. 😀
