    If prepared right, it is easily one of the tastiest herbal fish soup on earth..
    To reduce the fishyness, best that you marinate the fish with turmeric, lime and salt for 30min..
    That sliced asam is from the fruit Garcinia artroviridis or Gelugur..

    We have just heard of this special dish recently. It’s because ikan singgang is only popular in Terengganu and Kelantan! Have you tried ikan singgang before?

      In Sabah we call it ikan rebus. Bajau and Suluk love this dish. It's very healthy, loads of herbs. It's our daily meal.

    Ikan singgang tastes better the next day.Ask anyone from Terengganu they will agree haha.
    Best eaten with budu on the side but since I dont like budu,sambal belacan it is for me.
    The left over fish from ikan singgang,if you fry it crisp.. very delicious.

      Woo ... day old or two is better. Even better, deep fried, especially if you make singgang from sardine or ikan tamban. The saltyvand sourness become part of the whole fish, and the meat is more firm ... ohhh, as Ken would says it “Super sedap!”

    13:42 Those Asam Gelugur/Asam Keping known as Garcinia Cambogia in English In addition to giving a sour taste in cooking, it can also help as an Appetite Supresser and also serves as a Carbohydrate Blocker.

    Ivana is just so good with the Malay pronunciation.Asam gelugur,belimbing,ulam raja,pegaga,bayam brazil...they all just roll out of her tongue so naturally.
    I bet she will speak BM like the native speakers if she stays here long enough.

    11:04 ulam raja actually does not mean the king of ulams. The king of ulams would translate to raja ulam.
    Ulam raja actually means the ulam of kings.
    I love ulam raja for its aftertaste, that citrus flavor ivana was saying. The citrus flavor actually is very much similar to the flavor of buah kundang.
    Not many people have kundang trees, so buah kundang is a bit hard to find. I refer to it as the malaysian grape. The fruit looks similar to a grape, its size similar to a big-sized grape but the skin is slightly thicker, it's green and very sour when still not ripe, then it turns yellow or purple with sweet-sour taste. As kids, we often referred to the color purple as warna biji kundang.
    You can eat it just like that once it's ripe. But, either when it's already ripe or not, a specialty of negeri sembilan folks, they make true-to-God yummy sambal kundang! 😋👍👍👍 I'd say this is quite rare, I myself haven't seen this for many many years, oh no! 😢

    Fun fact:
    Asam Gelugor fruit is a family of Mangosteen. When the fruit is ripe we pick them and cut the fruit into pieces. Then we dry them under the sun until it become asam keping like Ivana used in the Singgang.

    Yes the head of most fish is the best part, a little more pricy, we have gulai kepala ikan, best seller of Padang restaurant next to rendang.

      Lada solok is the green chili. We call it lada solok because these chili are normally used to make solok lada. Solok are basically fish meat with coconut and spices filled into those green chilies and cooked in coconut milk or steam. Another version of solok is the same ingredients, but filled in the original fish skin and fried instead of boiled in coconut milk.

    Ikang Singgang is like our comfort food. Our mothers will cook ikang Singgang almost every day, as it's easy to cook (few ingredients and just throw all into the pot)..even can cook while eyes closed haha.

    For ikan singgang you really need to be generous with the salt, and balance it with a little bit of sugar and budu for umami taste. My grandma said the key is to cook it for a long time, it's a super simple dish but needs patience and lots of love haha

    You know what. This is the easiest dish to cook. But it is not easy to get the right taste just like it supposed to be. I've been cooking singgang few times but it didn't taste like my mum's singgang.

    Asam gelugur... dried gelugur fruit.
    other than tuna/ikan aya/tongkol, ikan tengggiri, kembung, selar or selayang also suitable for masak singgang, Ivana.

    Asam Gelugor gives sour taste in Malaysian dishes. The other one is Asam Jawa or Tamarind. I love Ikan Singgang. Eating with budu/tempoyak will be a great combo.

    Reminds me of my mom's experience living in US at one time. She was cooking with belacan and some kids from the neighborhood who were walking by said out loud that it smelled like a dead rat. This was in the 1970s.

    Actually, other than Terengganu and Kelantan, masak 'singgang' also can be found in other states such as Selangor...but the taste is so different...only the name is same.
    Singgang should come with budu, tempoyak or plain ikan bakar/ikan panggang and ulams.👍👍👍👍

      @@JetLagWarriors Try Jenahak and Ikan Merah and can also be Tenggiri. These are the common ones. The best is Ikan Merah. They are packed with vitamin D & E, magnesium, selenium and Omega 3. Cheers

    Asam Gelugor..or some of us call it Asam Keping
    It has this health property, we soak a piece in a hot water and drink it before meal in the morning.
    Ivana is a natural chef.
    Way to go!

      The sour treat (i have no idea what they call it..😛) helps control our blood sugar level, cleansing the bowel, helps with indigestion, control cholesterol etc etc

    Pegaga juice can be drank and it is supposed to refresh the body. "Ulam Raja" is eaten fresh and it contains antioxidant values.

    Bayam Brazil is my favourite ulam (fresh salad). Eat it fresh with rice... it's how local enjoy it. Yummmy

    Good job Ivana! My favourite dishes... and of course I am Terengganunian 😁. I even cook ikan singgang in Toronto 🤭. By the way, budu is the best complimentary dish to eat with ikan singgang, better than sambal belacan.

    Belimbing besi, after I found out that is has high contents of iron (hence the strong bitter & sour taste) then I would eat about 3-4 pieces whole.
