Instead, people are more or less forced to stand in line/be there early to get a table. In this way, the restaurants seem popular. Could be one explanation for the difference.

But I think a better example is like if you booked a taxi online, and then it takes you to the wrong place because there was a glitch or a malfunction in the system. Because in your example, you are the passenger, the waiter is the driver and the kitchen is the car. So if you tell the driver to turn right down the road to Westminster station and then at the end he turns the wheel to go right and the car goes left that’s not within the waiters control!

As long as they send out food, they keep their job and get paid by the hour. I will do my best to tell the kitchen what needs to happen, but its unfair to base my livelihood on whether or not someone else cooks a customer's food to their satisfaction after I tell them what the customer wants. Pyrion's analogy to a cab driver would be accurate if the car was a self driving car. In that situation, if a cab driver typed in the address for the place that the customer wanted the cab to travel to, took their hands off the steering wheel, and then it drove to a wrong place, and then the cab driver said "Oh well thats not my fault, its the car's fault" that would be valid. However, that isn't the case. The driver interacts with the customer AND makes sure that the person gets what they asked for. In a restaurant, a waiter gives the order to the kitchen and does their best to facilitate the transaction between a customer and the kitchen. They do not walk into the kitchen and cook the food. In many situations, another waiter or "food runner" will take the food to the table, which completely negates any interaction based on the waiter. This would be similar to someone blaming someone selling them a plane ticket that they, under every normal circumstance, would put that customer on a plane that goes to the location that they paid for, but the pilot flew to a different location. The seller of the ticket is at a booth communicating the desire for this person to go to this location, but then someone else who is in control of the situation after the seller of the ticket ruins the previous transaction.

The client was just waiting, having no idea what was going on, and that was the waiter's fault. If the kitchen didn't make the food, that's the waiter's duty to inform the client. You're not the one cooking but you're the only link between the client and the kitchen, therefore the responsibility to keep the client pleased is on the waiter.

I worked in a retail store, and no matter how lazy, rude, or incompetent an employee was, they still got paid. If they were damaging the business, they would be disciplined or fired, but as long as they were on the clock, they got paid. The manager couldn't say "I don't like your performance for the last hour, so we're not paying your for it. That was a surprise slavery hour." But the only reason that comparison is valid is because, like I said, restaurants are running a scam where they lie about the price of the food and then expect you to cover their labor costs, too.
