    Sesame seeds - Always be dry roasted. Kitchen world basic rule!
    We make the same recipe where we first make the masala, then stuff them in brinjal, fry the brinjal in oil and add tamarind juice and steam in cooker -1 whistle.

    Variations:
    1. Add khus khus in masala and omit onion, instead make an onion tomato gravy
    2. Add turmeric , dhaniya and chilly powder with salt, massage into the Brinjal, shallow fry and make a similar paste like yours as a gravy and add the fried Brinjal into this thicker gravy

    This is andra style enna kathirkai that goes very well with rotis and can be mixed with rice aldo. The more peanuts you take, the richer it is. Jaggery is compulsary at the end

    Rakesh what is the difference of pink salt and white salt, is there any enhanced flavor or nutritional value?

      Think there is less sodium in pink salt... Less sodium intake is good as doctors say

      I saw in some info that except for the colour, not much difference. Also the increased use of pink salt leads to mining of Himalayan region which is not good. So it will be better if we avoid using it. There is less sodium table salt available in the market. We can use that. You can use black salt along with the normal table salt in some dishes to enhance the taste

      Thanks. Recently large scale of pink salt is seen in the market, but it is very expensive here, that's why I am wondering. Currently the salt I am using has 24% of sodium, is it good?

    Masala preparation: (for 0.5kg brinjal)
    Dry roast sesame seeds (1cup)
    Take a pan and add 4 spoons of oil and heat it. Now, roast the ingredients below:
    Skinless peanuts (3cups), dhania (1.5cup), red chillies (8 ling ones), channa dal (1.5 cups).
    Once ready, cool them off and grind them all together masala ready.
    Take cooker - add 4 table spoons of oil and fry onions followd by ging garlic paste. Once the raw smell goes off, stuff brinjal with masala and pour all the excess nasala in the cooker. Now fry the brinjals for 5 min so close the cooker with a lid and allow it to cook for 5min. After 5 min , add tamarind juice ( extracted from a lemon sized tamarind) to the cooker. Add salt, chilli powder, jaggery. Now close the cooker and wait for the first whistle. Yummy andra shtyle enna kathirikai ready
