    I'm from St. Bernard Parish and my grandma always told me not to stir it once the rice is in and started the cooking process. I stir mine when it's done and it comes out perfect. I'm from the New Orleans metro area, so as you know we make a red Jambalaya here, but the brown one is very good too. In my area you can find the brown one across the river on the Westbank in Jefferson Parish as well as the red one.

    You definitely know what you are doing. I am a home cook myself. I could tell you knew what you were doing by the way you stir and when you added things, and how you let it simmer. Great recipe. I'd love to make this myself. Do you have a written recipe?

    @IslenoGutierrez You can do it the no stir method but I find you get better rice seperation if you stir until the rice starts to plump up.

    A red jambalaya is a jambalaya that uses a lot of tomato, tomato sauce or tomato paste to give it a really red color. It is quicker to make as you do not have to cook the meat and vegetables down as much.

    Yes, a red jambalaya is a jambalaya that tomato is used to give it a red color. It's more common to find this style of jambalaya in the New Orleans metro area, but not exclusive. A brown jambalaya is found more outside of southeast Louisiana like in south and southwest Louisiana. Adding tomato to jambalaya is a practice that comes from the Spanish heritage of the New Orleans metro area. Spain once owned Louisiana, and Spaniards were more abundant in the New Orleans metro area. Hope that helps.

    I've NEVER tried this. I'm in San Antonio Texas so Mexican is my specialty, then Italian & BBQ. I'd love to try this but since I've never tried this I wouldn't have any idea on how to season it since you didn't really tell us what's in your friends mix. But it looks delicious I hope I can try a recipe on it someday

      You can use any cajun type seasoning mix. Season the meat very heavily and then once you add the liquid season the liquid until you get it nice and spicy and put enough salt to your taste and then add a little more.

    Could I cut this recipe in half and expect the same results. I followed the 3lb recipe last year and I got nominated to do it again for Thanksgiving. But it just made to much for my family.
