I made it! I'm 8.5 months pregnant and this was very easy to make. Alhamdulillah. It's delicious! This made 1.3 kg of panjiri for me. I followed the recipe exactly, but instead of pecans I added pine nuts. And instead of sugar I used jaggery powder (Gud). And I used ghee, not coconut oil. Tip for anyone making this... Roast nuts in the oven. It cut down the effort my a looot! And the nuts were perfectly roasted, better than a pan. I just spread the almonds, walnuts and cashews on a big baking tray and put in a 350⁰ F oven for 10 minutes. Then I flipped them around, added the coconut, pine nuts, pistachios, melon seeds and put the tray back in for 3-4 minutes. The coconut was roasted perfectly. All nuts were roasted perfectly. This is going to be my breakfast for the next month with a glass of hot milk.
Zabardast, i made panjeeri always in winters and i use daal maash aata instead of suji and we all family members love to have it ( pregnancy is not necessary but the yummilicious flavour and energy)🤤 thankful of my mother in law, may Allah SWT forgive her and grant her Jannat ul Firdaus

Ruby Ma am desi ghee is healthier than coconut oil. As coconut oil coagulates in winters- not healthy as desi ghee; higher in cholesterol & doesn’t do much for strong bones. Also along with suji one can take a few take a get tbsps of atta it adds to the flavour. Powdered sugar can b substituted for raw sugar as it is healthier too!
