I disliked it because for one, her method of making ghee is wrong and two, in ayurveda it is not recommend to consume butter milk with salt. It must be consumed with jaggery or honey.
I am from Kerala. My Mom used to cook in Coconut oil n also use Til Oil. Ghee was used to make Upma etc. It's now that everyone has stopped using it. Refined Oil n all the new stuff. Since I am married to a Maharashtrian I also stopped using Coconut Oil. But now I am converting my hubby to Kerala style Cooking by using Ghee Til Oil n Coconut Oil. Thank you so much. We make ghee in a slightly different way. We collect the cream from yoghurt(top layer just like you took from milk). And while churning, I add few spoons of warm water and pulse it for a minute or two. The butter will come just like you showed in this video. Rest procedure is same :)

This is my mother's recipe except that she would advise that the milk solids settle and harden at the bottom of the pan on low heat. That way microparticles of milk won't get through the strainer into the ghee storage. 🙂

In Karnataka we take out the Malai from the curd & store it in the fridge . Then we put the cold malai in the mixie jar, whip it to get butter. We also add a little salt to the ghee & put 2 or 3 red chillies to the ghee while turning off the GAS at the end. The ghee looks lovely light orange & with salt it tastes good. Any way , I now came to know other method of making butter. Thank you for your recipe.

I was just wondering about the foam that gets formed on top when you heat the butter. Don’t we have to remove that?
I have made butter with milk that comes in packets ( pasteurised). When I blend it the butter does not separate from milk solids no matter how much ice is added. Finally I churn it with a traditional wooden buttermilk stick to extract the butter.

Instead it turns into a milk like solution with no butter solids visible. Can you help me and tell me what the problem could be?
Hi. I faced the same issue several times. Then with a simple trick from my mom, I have made perfect ghee always. Once you have blended it with the ice cubes or cold water, just pour it out into a bowl and whip it all once again for a few more mins using a wooden spoon or spatula. This has always helped me to get the butter separated out from the milk. Hope it helps you too.

Yes, you can use it for baking, for kneading dough for roti/poori. If using instead of curd....remember curd is thicker so consistency matters...otherwise it is okay. Hope this helps you, Indu.

Great video! Only one thing is unclear, you mentioned that you need to boil 1 1/2 L of milk and skim off the malai but then said you do this everyday and keep in the freezer. Does that mean I cannot make ghee from milk right now if I buy enough milk? Do I need to do this everyday until I fill a container too? Did you use buffalo milk or cows milk to start off from ....as I live in U.K. We can only easily get cows milk will I get the same result ....as I love makhan for prantaas. Rotee, to put on top of daal but back home they use buffalo and I love that taste...not sure how it will taste like with cows milk ???

What an informative video. I have been researching how to make ghee from scratch for a long time. Watching many UA-cam videos in Hindi to learn. I have been making mine by inoculating heavy cream and then following almost the same process as your instructions.The difference being that I use heavy cream and inoculate it with yogurt. But the heavy cream is a very expensive way to make ghee. I have one question. Do you use fresh milk every time? You you use a full fat milk as well? I use ghee for many reasons, the most important to me is the high content of vitamins A,D,E and K. The cultured buttermilk is bonus as well. No waste! I found a recipe in Hindi that uses a bay leaf in the cooking process and that makes a very delicious ghee. Thank you so much for a recipe in English. I can't wait wait to try your recipe.

Once you have blended it with the ice cubes or cold water, just pour it out into a bowl and whip it all once again for a few more mins using a wooden spoon or spatula. This has always helped me to get the butter separated out from the milk. Hope it helps you too.
Superb z the granules one are the best ghees.We used to get before but stopped using as it's not available in markets .I will make it , its natural without any chemicals .

Clarified butter is not Ghee, you need raw milk to make Ghee.

Yes, you can use it for baking, for kneading dough for roti/poori. If using instead of curd....remember curd is thicker so consistency matters...otherwise it is okay. Hope this helps you, Indu.

you need to add curd to make ghee (to get the benefits of ghee). sourness of buttermilk depends on the starter curd you use.
Great video! Only one thing is unclear, you mentioned that you need to boil 1 1/2 L of milk and skim off the malai but then said you do this everyday and keep in the freezer. Does that mean I cannot make ghee from milk right now if I buy enough milk? Do I need to do this everyday until I fill a container too?

Did you use buffalo milk or cows milk to start off from ....as I live in U.K. We can only easily get cows milk will I get the same result ....as I love makhan for prantaas. Rotee, to put on top of daal but back home they use buffalo and I love that taste...not sure how it will taste like with cows milk ???

I tried this way.. I ran my mixer for more than five minutes.. I still didn't get the butter.. It's like thick curd.. Earlier I have tried without adding curd, I got my butter in 2 minutes...
Add more water, you'll get the butter

What an informative video. I have been researching how to make ghee from scratch for a long time. Watching many UA-cam videos in Hindi to learn. I have been making mine by inoculating heavy cream and then following almost the same process as your instructions.The difference being that I use heavy cream and inoculate it with yogurt. But the heavy cream is a very expensive way to make ghee. I have one question. Do you use fresh milk every time? You you use a full fat milk as well?
I use ghee for many reasons, the most important to me is the high content of vitamins A,D,E and K.
The cultured buttermilk is bonus as well. No waste! I found a recipe in Hindi that uses a bay leaf in the cooking process and that makes a very delicious ghee.
