I heard that guanciale's are very hard to find there in America, and pancetta is a good second choice. I would recommend you to grate the cheese in very small grains so that they will melt right away. The balance you made with the saltiness of pecorino and sweetness of parmigiano is also a great combination. One thing, never put greens on carbonara, gricia (pronounced gree-cha) and cacio e pepe or amatriciana. Speaking about the last 3 other pasta, i'm looking forward for these pasta to appear in your channel. CHeers. Also look up Luciano Monosilio and watch his cooking style of carbonara
that is a proper carbonara and also a proper way to reheat cabonara. Absolutely one of my favorite Italian dishes. And this is a very freezer-friendly meal because you can always freeze the cheeses (because they're hard) and the raw pancetta.

haven't made it with cream since i saw the anthony carluccio recipe. i think it doesn't need it with all the fat and cheese. I also like to take the bacon out and top it at the end for crispiness

I love your content but you should know working in restaurants that NOTHING is an extraneous expense. Adding Parmesan powder or dehydrated parsley isn't a 150% in cost to the diner. Maybe people don't get the joke but it's harmful to decent restaurant s
Looks pretty good and you made it look much easier than most recipients I’ve seen. Only thing is the emulsion works better with finely grated cheese rather than shredded. Less clumps.

Could be. Nothing 100% There’s a lot of speculation on where it did start. Also read something about a solider from Chicago wanting breakfast and only having bacon and eggs.. it’s good to have an open minded on things, such on where or how a dish came to be
@@QuangTran. Sure thing, but it most likely originated IN Italy, no evidence of it originating on US soil. I've read that egg and bacon thing too, that the US army had lots of eggs and bacon. Never read that the soldier was from Chicago though. That's new to me.
Quite frankly, I don't care who came up with it. If I get a choice of what my last meal will be, it will be what I have come to know as authentic carbonara. I'm going to need the guanciale, I need the Parmigiano-Reggiano, no cream, cuz the pasta water and the cheese & eggs makes the cream. Super rich. So rich that if they cut me I don't bleed blood, I bleed carbonara 😂 That's all I need and I will die happy! 😂
lol.... italians going nuts right now.... there is no panceta in carbonara, you must use guanciale, panceta is a substitute if you don't find guanciale, you must grate the cheese thiner, and mixed with the eggs, making a cream, then you add to the spagetti with the guanciale , turn off the heat and mix quickly
To be honest. I’m not trying to argue with you. I’ve tried guanciale on my other carbonara videos and let me tell you. It taste the same as pancetta. It may be a preference for many Italians but in my opinion it taste the same, whether you get it mild, medium,spicy. You will get the same taste in my opinion. With your method on cooking in the eggs, cheese etc. whoever reading this. You can. But you’re definitely going to cook the eggs up to scramble, if this is your first attempt to make it. My way is easier and in the end of the day, it will come out exactly the texture of real carbonara sauce. Just my two cents here. Thanks mane
