- ...most of the households in the community of POŞAGA still have their own room dedicated to making BREAD (in Romanian "paine"). This room is very simple and consists of a small space-- where the woman works on the dough (which lays in a pretty big receptacle-and an oven in which can fit 10 to 12 breads and (according to the owner's taste) some pies (filled with cabbage, cheese, or herbs).
... first the dough should be worked on, for about 1 hour until it is ready to be left to yeast. Most bread in POŞAGA comes from wheat, very few do it from corn. An important aspect is the one concerning the yeast, as it is procured from the previous bread-production. So, the process of making new bread feels like an endless circle, tracing back to a bread production dating back maybe 40 years ago!
... after the dough has been enough worked on, the woman lets it rest for approximately 2 hours, so it can grow and be ready to become bread-in its raw form.
... then, the woman shapes the dough into bread and puts it into the oven. It has been always funny to observe that the embers, glowing with fire, are taken out of the oven with a wooden shovel!
...after another 40-50 minutes of patient waiting, the bread is ready! Up to 10 breads can feed a family of 4 for around 10 days. The best moment to feel the taste of a real bread is just few minutes AFTER it has been taken out of the oven: warm, crunchy on the outside, and soft in the inside, it makes your mouth melt with pleasure. Beautiful, what most people don't see is an artist at work. People generally see thier bread sliced and bagged, or from a modern factory. I can only imagine the great taste of the home made bread. It's sad that our young not won't even try this style of bread yet have the experience of making it themselves.
So true - but the fascinating thing is, that in Transylvania people still actually make their own bread, sausage, cheese etc. Many traditions, long-forgotten in other parts of Europe, are still very much alive here!

I would try it if you had given us the quantities!!! I make rye sourdough bread which , I presume , is on the same principals but this dough is much softer & stickier than mine ....so I don't know what ratio of flour to water .....

It would be interesting to know why she cracked off that crust on top of that dark loaf. I’d have eaten that. Aesthetic, or too crusty for taste maybe?
Because this bread weighs 1,5-2 kg needs to be baked for 2-3 hours so the bark is always burnt. What has done the lady was to remove the burned surface not only for aesthetic but that surface is too burnt to be eaten. ua-cam.com/video/e6FtBGd17PM/v-deo.html
@@florentasuciu8464, there is another comment saying it’s to let the humidity out of the bread; which makes more sense to me. Thank you for the other video, I don’t understand Rumanian, but the bread doesn’t look burned to me.

Hello Andre. I am italian but was born in Romania and intend to return with retirement. It is white flour and yeast bread. With salt added to the paste. She is breaking the crust because the paste is more watery then the normal bread. It is also very tasty made with natural yeast that is the original recipe. Greatings from Italy!
