I made a batch a few hours ago. I used my Kitchen Aid and needed to add 3 or 4 Tablespoons of water. All the kneading was in the machine, about 10 minutes. I baked at 375 F for 25 minutes right on a cookie pan, no paper. I squirted a little water in the preheated oven before baking. I formed 4 rolls about 8-1/2 " long, the same size I make my sausages. Wow, they are great! They're soft and chewy with just a touch of crust. I'm not sure I've had a better hoagy roll, and for sure it's the best I've made. They look a bit dense, but the mouth feel is right. The real test will be a Philly cheese-steak all sloppy with grease. Congratulations on a top notch recipe. Just opened my last 5 lb bag of bread flour; might need to don a mask for other than health reasons.

These are awesome! I am a new bread baker, so always look for “easy” recipes. I made some meatballs and wanted a sub, so decided to make these. Of course, I had to do a taste test before using it for a sub, so I put a little butter on and so delicious. Will definitely be making these again! Will likely do various sizes and shapes for future batches. Thanks for this!

I made really good ribs yesterday. Today I’m going to make sub rolls. Dinner is gonna be so freaken good. Edit. So I made these. I skipped the egg and milk topping and instead kept spritzing the top occasionally while final proofing with warm water while in my “proofing box”. Then before baking I topped them with an Italian herb and cheese mix. Freaking amazing.

Positively, the best hoagie recipe! I bake for myself, so I scale down for 1, 2 or 3 rolls. I also use a blender to mix and knead (less time and clean-up).

  • @jerryozziepryor1623

I'm excited about this recipe; can you tell. I just made another batch. I got to thinking that maybe my way of measuring water, (a measuring cup), might not be very accurate. Using my scale 236 G of water went way over the 1 Cup mark on the measure! So, I made the recipe by weight for the flour and water. Again all the mixing and kneading were done in the KA. 10 minutes after all came together on #3 speed. The dough was wetter than yesterday but manageable. I made 4 balls close to 7.55 OZ each. I formed the rolls on granite, no flour, no oil. Worked fine.
I preheated to 425F with a pan of water on the lower shelf. I baked at that temp for 10 minutes then lowered to 400 F for another 15 minutes.
Everyone has their own idea of the perfect hoagy roll/ cheese steak roll/ panini roll, I'm sure. For me, what I got today is superb! The rolls are a just a bit crustier, just a bit. The center just a tiny bit more open and just as chewy. And when cut they form a good hinge. Many, many thanks C.P.

I'm waiting for these to cool down and they smell delicious! Only 1 out of the 7 I made came out well enough for a good sandwich (the other ones are a bit skinny). I probably should have let them rise a bit more or made less rolls, but for a first attempt they came out alright :) I think I'll use the skinnier ones as hot dog buns. I baked them at 356F for 20 mins.
Thanks for sharing this recipe; I've been baking a lot during this pandemic and it helps distract me from everything going on in the world.

You can also spray a decent amount of water on them right before they go in, get them good and moist and add any toppings you want (poppy, sesame, carroway, etc) and pop them in a very hot oven while still very moist. If you want them VERY brown without getting burnt, pour some boiling hot water in a tall sided pan underneath the primary bread pan and allow it to moisten the whole oven while cooking.

It’s July, and I am in Texas, so I’m not sure if that had an affect, but I found that the dough was way too dry to be kneaded by hand so I slowly ended up adding around 3/4 of a cup of whole milk because I heard somewhere that… the more fat you can get into the dough/bread, the better because it means it’ll be more moist, and then I used the BERTINET method of kneading the dough because it was so sloshy/sticky, and it took about 20 minutes to finally get it, smooth and not sticking to my fingers anymore which I know means it’s ready. 🥺
Hope it will come out great, I also saw another recipe, saying to add an egg into the dough but I don’t know if that’s a good idea just yet.
Another basic principle I heard from another video from a guy who knows how to make bread is that you never want to exceed more than a 2% ratio of salt to the entirety of the dough mixture
So basically, if you’re measuring 1000 g of flour, this means you can have up to 20 g of salt in the mixture🙃
I tried a different recipe the other day, and the guy that video said for every 2 inches of sub, I t’s basically about 1 ounce of dough which I thought was really solid in theory, but then, when it came time to bake, it seems like it should’ve been 1 inch for every 1 ounce because 12 ounces would’ve made a proper sub.
