Should have bled that cat/barbel! Hang it from a tree and cut the tail so it bleeds out, can cut the gills to., that way the flesh will be white rather than red and will be far less "gamey". You can also soak it in buttermilk for a couple of hours, then bread and deep fry. Amazing!
