My parents are from the south and my mother biggest lesson she taught me is to always keep my hands clean, wash the meat , veggies and fruit before serving, Also cleaning as you go while cooking & prepping the food. Our ancestors originated from Africa and was deported to the Caribbean and other countries, held on to the same traditions, including enslaved Africans in Amerikkka. i roast my chickens the same way but i never take out the back bone i put lemon juice garlic dill pepper and salt and cook at 400f for 1 hours comes out great

You can use olive oil , avocado oil , coconut oil ect the list is endless. No recipe is in stone, you can always substitute and customize to your recipes for your preference. 🤷🏾♀️

I don't know what you think washing a chicken has to do with preventing salmonella. For one thing, you're just wasting limes, as that accomplishes nothing. As you say, you're only doing it because you're from the Caribbean and 5 generations before you did it. Salmonella wasn't even discovered until 1885, so anyone washing chickens with limes 5 generations back would not have even heard of it in the Caribbean. Regardless, salmonella is killed by cooking food properly, not by washing it.
