Also, I am guessing that the red stuff in the raw beef and liver is not blood, but some form of muscle protein called myoglobin, which can also be found in, e.g. medium rare steak.

I think the chewy food that you tried is tuwalya ng baka. We also eat that here in the Philippines sa kare-kare and goto (lugaw). That is really gooey but yummy. Food trip with your fam is always fun. Enjoy!!
That restaurant owner surely earned a lot of money. He does not pay for a chef, only butcher. He does not use gas and cooking utensils and spicies. Maybe next time for improvement, sell a live fish, chicken, pig, cow on your menu. Hehe
I tried eating kong guksu before by using tofu and it was really bland and all you get is the taste of soybean. I don't hate it its edible and you can eat it but I would rather eat something exciting like bibim guksu, cold soba noodles, and naengmyeon. Maybe I'll make it the traditional way with fresh soybeans and add more seasoning to it but I don't know if I'll go back to something so lifeless and boring.
it Is ok to eat “innards” and organs once in a while, but remember that innards and organs are to be eaten seldom because they are the cause of uric acid - the cause of rheumatism….
