I toasted coconut recently and totally burnt it! Didn't look like yours at all - I think I need to swish it more. And coconut extract - what a great idea!! I'm totally trying that. I'm also a fan of monk fruit. OK, girl, you sold me, I have to try it. I'll even invest the 2 days to make it - haha. Thanks, Heather for another great recipe!

I’ve just googled it and realised I know it by the Chinese version and never knew the English name! I learn something everyday! I used to eat Luo Han Guo when I lived in Beijing and it’s definitely regarded as a natural sweetener to help with weight loss and tastes GOOD!
That would be awesome. I am sadly allergic to bananas or I would be making a banana cream pie next! Maybe I should make it and then I won't be tempted to eat the whole thing!

You could likely make this into a banana cream pie fairly easily! I am allergic to bananas, sad face, or I would make that next!
