Dominicans from the island use vinegar on everything…they wash the meat/ protein with vinegar …the origin was because it cld be gamey…freshness not always guaranteed
Sofrito is not just a Puerto Rican thing. It's a Caribbean thing. Cubans, Dominicans, even Italians use their own kinds of Sofrito ❤️ Recaito is the "green" Sofrito. With cilantro as the based. If the Sofrito is red it's because of the tomato sauce 🍅 You can buy it off the shelf in a jar or in the freezer section in a container (Congelado). You can also buy it FRESH from an international or Caribbean food Mart. But the best way to make it (in my opinion) ALWAYS fresh. Everyone has their own recipes to make it so there's no "right way." You just have to play with it until you get the right recipe for YOU! My personal recipe is: 3 GREEN Bell Peppers 1 RED bell pepper 2 onions 1 BIG tomato (or 2 SMALL ones) 1 whole clove of garlic 🧄 (I use elephant garlic -personal preference) Whole stock of Cilantro (sometimes half of another stock because I love the recaito taste). *Recaito is a puree of Cilantro, Onions & Garlic 😋 Puree everything together. Don't chop the pieces too small otherwise you'll lose some of the juices. Add just a little bit of everything as you go, so you get a good blend of flavors. I'm Puerto Rican, and we grow up helping our parents make Sofrito from a young age. Hispanics don't use exact measurements. We keep adding until our ancestors whisper, "Cono! Eso es suficiente!" 😂😂😂
Recaito also has recao which is similar to cilantro but different, that’s why it’s called recaito and the other is called sofrito because it’s sautéed when used
Thank you so much for sharing! My Mom was Puerto Rican, but she passed away when I was 15. Unfortunately, a lot of her amazing recipes were lost with her. The Puerto Rican style(green) sofrito is the best, and they sell it in the frozen food section at some grocery stores.. You should really try it.. By the way this meal looks delicious.. 😊
Replace the ingredients with no/low sodium Ex. Low sodium stock instead of Sazon and water. No salt added beans. Sofrito is a paste/puree with peppers, onions, tomatoes, garlic, cilantro. You could make a big batch and freeze into portions. Instead of salt/sodium you can enhance dishes with umami- nutritional yeast, MSG, mushrooms ... and a little goes a long way in regards to things like liquid aminos, miso, worcestershire, anchovy paste which aren't themselves low sodium but you don't need a lot to boost flavour
Use onions, garlic sautee real good, add annato(which is in sazon and gives the color) or just a bit of the sazon packet and some fresh cilantro leaves, cubanelle peppers and oregano. Season it up to taste with all else and you have a way better option than the whole sazon packets. No sofrito needed if you dont have it cause you have the base there already. Im puertorrican and thats how i do mines. The sazon packets have hella’ sodium monoglutamate; theyre ok to use complete when cooking a whole pack of rice or something , not 1-2 cups. Hope this helps. As for one can of beans, you dont need to put the whole can of tomato sauce, just a bit and simmer well. And lastly, rinsing the beans can help avoid the extra sodium in their liquid
That looks delicious. That's why I cook some smoked neckbones, take off the meat, save the broth too, then cook my beans so there's a bit of meat in my beans. I freeze the cold neckbones and broth until I need them. I would have dropped the chunk into the beans. I don't care for beans (except for a few in my chili). But generally I eat black beans. They put off a bit more water. Glad you mentioned them. My hair grew a LOT when I was eating beans and rice.
I'm New Yorican and have never seen an acid, other than tomato sauce, added to beans. BTW, I've seen many different Puerto Ricans, including my mother, neighbors and relatives, cook beans from scratch.

I was wondering about the g-beef also. I make beans and rice for my family a lot, but didn't know about the g-beef, was very interested in seeing how she would use it. Oh well.
I marinade meat and some of the vegetables in white vinegar with brown sugar, salt and spices. I used to use lots of tomato but now I use very little. I slow cook the meat for hours and I add 2 different types of beans (drained) for texture and I have loads leftover at the end, I make batches with 3 different types of meat and freeze any left over. You warm it up with cheese on top and in a tortilla, and you can add tomatoes, cucumber and corn with lime juice for crunch. I made so much I even have leftover marinade.
