- Kinilaw na dilis is one of the most popular types of kinilaw. A kinilaw is a dish wherein fresh seafoods are eaten raw after being marinated and seasoned together with vinegar and some seasonings. This dish is usually compared with the ceviche. But the difference within the two is that the seafood in kinilaw is marinated in vinegar while the ceviche is marinated in citrus juices like lemon and lime. The kinilaw na dilis is usually made spicy and enjoyed as a pulutan to an ice cold beer.

Ingredients:
1/2 kilo dilis (anchovies)
3 pcs siling
3 pcs siling labuyo
2 thumb minced ginger
1 minced onion
5 squeezed calamansi
3 tbsp vinegar
Pepper to taste
Salt to taste
Sugar to taste
Procedure:
1. Washed dilis thoroughly
2. Remove head, innards, bones and tails. Set aside meat.
3. Washed fish meat thoroughly.
4. In a bowl, combine all ingredients fish meat, ginger, siling labuyo, siling haba, salt, sugar, pepper, and vinegar. Mix until well combined. Cover.
5. Chill for atleast 30 minutes or until ready to serve.
6. After 30 minutes, serve and enjoy!
