Recipe :
2 Corn stalks
1 Shallot onion
850 ml Vegetable stock or water
2 pinches Za'tar or Thyme
1 tsp Harissa Paste
Popcorn for decoration
1 tbsp Olive Oil

using a knife remove the corn grains from the stalk, then cook the stalks with the vegetable stock or water and the Za'tar about 15 minutes on medium heat.

finely chop the shallots and saute with olive oil in a pot, then add the corn and saute 5 minutes more.

add and strain the Corn/ Za'atar stock to the pot - cook for 20 minutes covered.

using a hand mixer or better a blender, blend the soup into a fine smooth texture.
take 1/3 of the soup and mix with the Harissa ending up with 2 "soups" red and yellow

for best serving. pour yellow soup from one side and red from the other making a nice 2 colored plate.
decorate with some Popcorn as it gives a nice texture.
