Best way is to disasemble door handle and do every peace separate. Second best is to do inside peace with two peaces with middle cut.

In this situation I am not cutting on the paint. I am cutting in the gap

There are situations that you do cut into the paint for a wrap? can you please do a short tutorial on cutting? It seems so simple, but we can't what your knife is doing. For example, when you do cut the gap, what tricks do you use to keep the cutting straight or the tip of knife blade off the paint.

When you cut by using the gap you are essentially using it to guide your knife which would also means the the cut will be straight.
The only way to not to cut paint is to just practice, you simply can not explain or teach how "hard" or how much pressure to put on the blade when cutting. There are so many variables such as the thickness of different brands of material and the different finishes.
Go to a training program or just buy some vinyl and try it on a surface that you don't mind cutting into.
Or just avoid using blades/knifes and use knife-less tape.

Depending on where you live, you should find local print shops that are most likely able to order vinyl from Avery, 3M ( , ...) for you. otherwise you should find an endless amount of online shops.
I wrapped my 2016 Golf R last year with 3M vinyl and I spent like 650€ on the vinyl, blades, some squeegees, heat gun and all the other stuff you need.
