I've seen oxtail pho on Mikey Chen channel. It won't me like Jamaican oxtails but when you bite in you can tell it was cooking in a flavorful broth for a long time
Its boiled with seasoning so you do not get the same color you get with Jamaican oxtail. Jamaican oxtail you stir fried the oxtail and you use browning to get the really dark color. They are both seasoned, its just prepared completely different. However, many southeast asians soups encouraged you to add extra seasoning. Seasoning like green onions, herbs, lime, garlic, salt, and many other sauces are involved to make your food to your liking.
Oxtails kind of pointless in pho. Beef bones enough, has the same stuff on it, a bit of meat and collagen that breaks down and thickens/flavours then broth. It's traditional to use it in Vietnam but in northern America it's like 20 bucks a pound. Rather have it in something special like the Jamaican stewed version.

Wider noodles, beefier broth, less condiments served (usually only spring onion, coriander and maybe onion + chilli, vinegar and maybe ground black pepper). Team pho here + I favour Northern Vietnamese pho (where the dish started out). That is the biggest oxtail I have ever seen.
@@CNXSTREETS I didn't know there's a Laos version. I'd love to try it one day! I have to say, the Cambodian pho was a lot salter and less flavorful, with minimal condiments. I was a bit disappointed.
