Little tip about the butter making: you should kneed it in a cold water bath (wash it) to get rid of the buttermilk, refreshing your water several times. Do this until your water stays clear. This is important if you're not planning on using it all immediately. If you don't remove all the buttermilk it will sour within the week.
best thing about making your own butter is that you're paying twice as much as buying butter from the store. 😂 that $10 quart of heavy cream will yield about a pound of butter, LOLz! 🤣
@BobRooney290 I am Not denying the validity of your statement. But I have still saved this to my recipes playlist because every now and then indulging yourself ( because the flavor of homemade butter is beyond compare, especially if you pair it with homemade bread or other pastry)... but yeah, realistically as good knowing this is, you won't replace commercial made entirely. If... you are lucky enough to live in an area that has farmers with dairy cows you can often buy fresh unpasteurized milk cheaper than the store... if you are even lucky enough and skilled enough, find something that has real value to them that you can trade! I realize that I am luckier than most, but that doesn't make this invalid.
@MichaelOKC your statements are so true. Also as I make a lot of ghee, store bought butter has some unappealing things in it. A well known butter had some pink stuff in it that has turned me off of store bought butter.
Just a tip to spray the top of the bread with water before baking. That will help eliminate that dried flour, add to the crust and give a more even color. Once upon a time very long ago, I worked for Au Bon Pain and I had the fortunate experience of learning the baking process as a manager. They had really good baguettes and we would spray them.
Glad you helped the guy w his food processor during contest. I use to LOVE watching the kids competition on G.Ramsey show. The difference between good sportmanship, compassion, kindness and respect towards their competitors verses the adult version reminds one of the ole "rules for thee not for me" as we teach kids to share, be good sports, not to bully or name call, be good citizens, etc., yet don't see that demonstrated by adults as much as one would expect.
After I watched this video for the first time. I spent a few hours searching for a food processor to purchase. Was a little out of my price range but later that day I went to a thrift store and found a 1983 Cusianart. Basically unused. For $12. I use this things every single day sometimes up to six or seven times. bread, butter, peanut butter, nice cream, pie crust .... I can't stop!
They are so great! I found a Cuisinart food processor that my neighbor put out in the alley when they were moving...then I ordered the shredding wheel online, which is not very expensive. I have not tried dough, but after watching this video it will happen soon!
Awesome!! I got my first Cuisinart FP in about 1979. It last 25 years with regular use (especially bread 😊). After it went to the Cuisinart graveyard in the sky, I got another in 2004 and it’s going strong.
Thrift stores are absolutely amazing places. My air fryer died and I didn't want to spend a fortune on a new one so a few days later I walked across the street to our SVDP thrift store. Amazingly, I found the biggest Emeril Lagasse air fryer they make, still sealed in the box for, get this, $12! I was stunned! I couldn't get it in my cart fast enough 😲☺️
Food processor tip when making bread. Turn on the processor before adding the liquids, allows the flower to be moved to the outside of the bowl, then pour the water in. Helps stop the dough from getting under the blade.

I like the varying tones of voice and the concluding comments at the end of shots, it makes things enjoyable to watch AND listen to! Great job
I have that same food processor and I love it for 100 reasons. My top three are 1. any fruit purees that I add to yogurt or cakes. 2. pie crust - they turn out perfect in the food processor and 3. shredding cheese - so much cheaper and quicker to shred your own cheese.
Best healthy food channel ever 🥰I love all tips I'm living in US for 8 years and the ingredients are different of my country and you have been helping me for years thank you 👏🏼👏🏼👏🏼
Very cool content today! Thx! Similar to your meatballs, I just used my food processor to make sausage from boneless country ribs. Have to cut into cubes and freeze awhile before grinding, then add seasoning of your choice and shape. Refrigerate to allow flavor to develop and fry. Delish! 🙂
Country ribs are nothing more than thick-sliced pork butt. I just purchased 11 lb.s for $0.88/lb. So after removing the bone, I'll make over 10 lb.s of ground pork and sausage for less than a dollar per lb.!!
Totally unbelievable videos you make. They zip right along, entertaining, easy and practical. Love all the vids I’ve seen so far. I will need to make the peanut butter as I can’t seem to find any without sugar lately. The normal one I buy I have to stir and is a bit of a pain, literally, then the bottom still seems dry toward the end. Thank You So Much! I shared your vid with SIL who is gluten free dependent.
Not pretending to be a master chief or anything, just a little French anecdote, my mother always used a razor blade to made the slices on the dough! There always was a little box of razor blades in the kitchen drawer. Anyways I love watching you make everything... But I'm always too lazy to actually do it 😅 Keep up the good work!
Really enjoy our videos; they move along at a fast pace but not so breakneck that the viewer feels lost. Plus they do not drag on with superfluous cutesy or pointless passages that make you feel like screaming move on already. Always informative and very useful.
Perfect timing! I just bought a food processor to make pie crust and now I'm trying to figure out what else to do with it. Now I've got some things to try!
I really appreciate the simplicity of it banh mi can seem complicated but you just made it so simple and homemade! I have been trying to figure out what can I do to make cooking for my family easier on me because I have back problems and I can't stand for that long this definitely cuts that time in half as long as I food prep properly and give myself some time. Thank you so much I needed this video. ❤️
Just a reminder to folks: while Mike's organic garden may not use pesticides, if you purchase organic produce from the store, they can still have pesticides. The US requirements for the term are that no artificial pesticides are used. Natural pesticides are still fair game, which means you still need to rinse your store bought fruits and veggies. Also, great vid! Out of curiosity, for the cultured butter is it helpful to boil the cream first? I know with yogurt making you're supposed to boil the milk before adding the culture to give it a more neutral starting environment, but I'm not well versed in cultured butter.
When I saw your thumbnail I immediately thought you were going to "mill" wheat flour in your processor to make the bread. Have you tried that?? Just a few days ago I did it in a Vitamix and the bread was delicious! Yes... a little grainy and no... it wasn't perfect. An actual mill would have been better. But I would make it again a million times over. Way better than store-bought!
Makes me happy to watch your videos! They are real!! Putting lid on processor - laughing so hard - then again later lol - my life - will use your info - omg “ …ya need a fricking oven for that!” I love it your must but keep me wanting to watch it - so I’m nuts! 😊 love your garden!! Never had but willing to try it!!!
I sometime make butter with my Vitamix. I got rid of my mini food processor when I got the Vitamix. But I did not know how to make cultured butter. I definitely try this recipe. Thanks, Homemade butter is so fresh and much better than store bought ones.
Pros and Amateurs. Amateur here. As a byproduct of my Keto diet I've noticed that any recipe that calls for citrus juice can just as nicely use zested citrus peel (which has less carbs but does have the flavor) so when in doubt about a lime, zest it first and then get the few drops out of it. Enjoy the holidays my lovelies. Hugs from Mexico, JIM
my Vietnamese mom taught me to salt the shredded daikon and carrot and let it sit for like half an hour ish, then rinse off and basically proceed like you did but without adding salt again in the second step :)
Thx for a great video:) I love all ur videos and they inspire me so much in my day to day cooking. One thing tho , could u pls pls tell in ur vid how long the food can keep in the fridge? Like the chicken meatballs prep is ground meat (so maybe two days max) but then the soy sauce and sugar gives a marinate soooo my brain says four days but it’s a pretty vague estimate:/ Anyway thx a lot for all ur videos they amazing 🤩
I learned the bread dough in the food processor trick for bread to make weeknight pizza dough. A game changer. Food processor is not only faster, it makes for so much less mess and cleanup. You missed a great surprise food processor recipe, Nigella Lawson’s Fairy Cakes. Almost instantaneous cupcakes with zero mess. A parent’s lifesaver for kids parties or last minute makes for school next day. Like the food processor butter. Flashbacks to making butter at Girl Scout camp, shaking a mason jar full of cream, passing it on to the next girl when your arms were exhausted. Tiny bit of butter, but best ever.
Long ago I was convinced I couldn't make bread by kneading on my own. Voila--food processor I used with a recipe for bread that came with the machine. (I wanted it for making chile.) Went to some pastry classes and can now hand-knead anything, but often go processor depending on the day.
@@leemanfatima3615I use 3 1/2 cups or 400 g in an 11-cup Cuisinart Classic. Use cold water and process 60-90 seconds. Only add enough water to bring the dough together, otherwise you'll have a sticky mess.
"Spread some butter on there, because - why not?" :) Your video not only got me smiling, but also got you a new subbie! I was here for the food processor bread dough, and it seems I'll be coming back for more =] cheers!
Great video! I’m going to dust off my food processor! I recently purchased a couple of sliding mats for my heavy small kitchen appliances like FP and stand mixer. I love the idea of making rolls in the FP. I’m really sick of the breads found in stores, especially with all the bromide warnings, so must try your recipe. Thank you! 😅
This was an awesome video! I replaced my 15 yr old food processor with a Ninja- I am hoping I can use it for most of these- I do have a 1970's All Steel Vitamix that has a dough making instructions- I haven't tried it yet though. Thanks for all these ideas!
I had a 70's steel Vitamix and it would grind the wheat berries into flour and process the dough. I left it at my brother's house and he gave it away or threw it out 😫, I have never forgiven him for that.
I got a Ninja this year. It’s ok, but after more review I wish I would have got one with larger shoot. I think the one in video has the multi size opening. Oh well, it’s better than the mini I’ve had for years.
You’re the first I’ve seen to make cultured butter, or what the Indians call “makhan”. So much superior in taste to the usual butter in western shops, and it will not spoil quickly. Good going! You can also make your own ghee from it, saving money versus buying it ready made, and it’s far healthier than vegetable oils. And ghee makes vegetarian food taste meaty. (You should try cauliflower pakora fried in ghee to see what I mean). I wasn’t sure how to make nut butter in a food processor until now; I’m going to make some today!
Your bread making looks awesome. I have the Hamilton Beach 8 cup food processor so I don't have a dope blade. But, you've inspired me to make some nice stuff!
The sandwich looks delicious! I know some people don't like the editing & animation, but I do. I have a short attention span & will turn off anything boring in an instant. You kept me interested until the very end.
I have the 11 cup Cuisinart food processor that is definitely worth the money. I did a lot of research af the 5th food processor died from something simple and I was incredibly pissed. It was a kitchen aid and I thought it would be a good brand. The Cuisinart is amazing hands down compared to the other. I like making pasta dough in it. It makes the dough so much easier to make.
I bought a food processor to make salads but one day wanted to make cookie dough. I was crying trying to mix it by hand (I broke some tools trying to mash it), and I wished I had a machine to mix it... then I realized the food processor had a dough attachment I always ignored, and I was thrilled I already had all I needed in one evening. It really is a marvellous and powerful machine.
I really want to try to make this. Sorry if this a dumb question but when you say "wash the butter" are you meaning put the whole "glob" of butter in a bowl of ice water and knead it changing the water until it is clear? Finally ringing out all of the water in the butter? Thanks
@@tjsullivan4793 yes correct, and while kneading you sort of pull layer by layer from one side to the other so you really go though it. You can use a spatula or large wooden spoon. Change water and pull layer by layer to the other side. Repeat until clear. Now's the time to get your Dutch hands out, or use two wooden spoons. Lay the butter on a surface and knead until no more water comes out. If you're salting, use butter salt. Or grind salt into fine powder and knead it into the butter. Form into blocks and wrap in parchment paper. Done! Sounds a lot, but once it becomes a routine it goes pretty fast. Good luck!
I love my mid sized processor from the 90's. Finding replacement locking lid and correct blade was the Bain of my 2020 experience. I now have parts for 4 different processors but no complete one. Folks really need to correctly identify their listing. I know what I have, why don't they know what they have?!?
I notice your food processor had moisture inside when you took it out of the cupboard. This often used to happen to me because the plastic parts are really difficult to dry properly. It can leave you with a mouldy smelling appliance. The easiest solution is to store the parts loose in the cupboard. Only reassemble them when you actually want to use it again
@@moose7266 he could have done either. I never fully close up mine, I put the lid on, but do not put the chute in place so air can get inside the bowl and it just sits on my counter in between uses as this will make it easier for me to utilize and I do, several times a week often, but certainly at minimum of once a week.
LOL, i have that same little guy there. I overuse it a little though. Sometimes it has a burning smell to it because I taxed it too much. Just got a 100 GE full size for 12 bucks on an auction. Very happy with it
Great video! Love the marinated veggies! I was told to never keep raw meet, after cutting it, in the fridge because of bacteria, especially chicken, so I am not convinced with keeping the mixture overnight.
I LOVE your videos. I watch them every day and bring watch the when I can. Can you please tell me where you got the train schedule sign above your door? I was blown away by the time change. I need this🥰🥰🥰🥰🥰
I have this same food processor, I thought it was going to be an excess on my kitchen, it has become my most used appliance. It is a BEAST! P.S. I have the same scale too! I'm kinda thinking about getting one that goes to the tenth of a gram though because I weigh my coffee beans before I grind them.
Tip for the bread dough - put in the dry ingredients and set the processor going. Then add the water slowly through the feed chute. That way you can see when it comes together.
I'd like to try making butter at least once. Can I use my unflavored kefir for the ferment? Also can I put the salt in the processor? Have you ever made cream cheese with kefir? It's to die for.
I've made perfectly wonderful butter without ferment. Just beat the h out of cream, drain off the whey, shape, and refrigerate. It's especially good in small batches, specifically seasoned, for a dinner party.
Who knew you can make so many things including amazing butter and bread! My mouth is salivating just watching you make all these food. Ok - time to whip out my food processor 😋
Wow I’m will certainly try these, I have made butter before and just forget to make but I will try these tomorrow. I also have made bread for many years, will try your way. Thank you.
Love your show so much, wish you didn't censor the food at the start tho, like knowing what the episode is about in the introduction, thanks for all your amazing recipes and tips ❤️
There is no need to harden butter in the refrigerator before straining, what you want to do is strain out the butter milk then RINSE in an ice bath or cold running water in your sink. Not only does this remove all the buttermilk that will speed the spoiling of your butter it simultaneously firms it up to the consistency you want to put in molds/containers.
0:27 I have thise same little one. It's perfect size for an 8inch pizza. 7:45 While nice, the metal blades work just fine, especially if you can run it in reverse like the tiny one.
Love your channel. Great tips. Can't wait to try the bread! And yes those refrigerator pickles! We had a wonderful garden this year, in the mountains in NE Alabama.
I have a question on the peanut butter, does it need to be stored in the fridge or is it ok in the pantry? Thanks for all the great ideas! I’ll be trying the baguette’s also.
I would store it in the fridge because of natural oil that can go rancid, but if not hot in the house and you know you will eat it in couple of weeks, it might be okay. The store bought ones have stabilizer and probably conservant.
Careful...you can crack the hot cast iron pan by adding ice cubes. I use a crappy metal roasting pan. I pre heat it on a rack under my baking stone. Then I pour hot water in when I add my bread to the stone to bake. Initial burst of steam, and steamy for the whole bake.
Good content! I had to pause and go spend $1.99 to buy Chopped Season 17 episode 12 when I saw you had competed. Hope you get your royalty check - lol.

I have been trying to figure out what can I do to make cooking for my family easier on me because I have back problems and I can't stand for that long this definitely cuts that time in half as long as I food prep properly and give myself some time. Thank you so much I needed this video. ❤️
Was ready to sell my FP...a little messy making bread...but OMG so many OTHER options...yummmmm

Washing your butter gets it really clean. You can get all the pockets of milk residue out that way. Then once clean I add salt.
I enjoyed watching you for some reason one cant get bored watching you ,love farming also
Just a reminder to folks: while Mike's organic garden may not use pesticides, if you purchase organic produce from the store, they can still have pesticides.
We have an organic garden also. Using BT to great effect. Yes we rinse everything.
… I’m pretty sure boiling milk before making yoghurt is for when using raw, unpasteurized milk …
boiling milk before hand helps in thicker creamier yogurt as well as butter
I’m making cultured butter and farmers cheese from fresh raw milk from my friends dairy farm! I’ll turn it into a compound cultured butter:)
You are supposed to wash the butter and remove the butter milk residue before you refrigerate the final product for use.
Yes or it'll spoil quicker.
How you wash it? Just under water?
@@marjory62 knead it in ice water, or really cold water, changing the water out until it stays clear.
@@justpassinthru oh thanks!

Just like the pickled dikon and carrots you showed I love using my food processor to make a vinegar based coleslaw in it.
my Vietnamese mom taught me to salt the shredded daikon and carrot and let it sit for like half an hour ish, then rinse off and basically proceed like you did but without adding salt again in the second step :)

Thx for a great video:)
I love all ur videos and they inspire me so much in my day to day cooking.
One thing tho , could u pls pls tell in ur vid how long the food can keep in the fridge? Like the chicken meatballs prep is ground meat (so maybe two days max) but then the soy sauce and sugar gives a marinate soooo my brain says four days but it’s a pretty vague estimate:/
Anyway thx a lot for all ur videos they amazing 🤩
Thank you!
How do you manage to avoid the dough getting sticky?
Long ago I was convinced I couldn't make bread by kneading on my own. Voila--food processor I used with a recipe for bread that came with the machine. (I wanted it for making chile.)
Went to some pastry classes and can now hand-knead anything, but often go processor depending on the day.
I love your vids. Just bought myself a kitchen aid food processor. It’s vintage but works great. Can’t wait to try these recipes!!
I didn't know you were on Chopped. What episode and season? I'm keen on watching it!
season 17 episode 14. Cloche Call from 2013
I’ve been using my food processor to make bread dough for years. Happy to see baguettes in a size that makes sense for my oven.
Hi good morning Joan I'm from South Africa. How much flour can you put into a food processor. Can it hold three cups. Thanks
Oh how fun!! Yup, a few new ideas to use the food processor. But wow, the finished meal looks a-mazing!! 👍😋
Oh well, it’s better than the mini I’ve had for years.
ive putted some duck fat in the food processor with the chicken was absolutely amazing :D.
You are just fun to watch! Very knowledgeable about so many foods. Thank you! Love your editing style also! and the humor!

They taught us how to make bread and butter in a food processor at school decades ago. Nice to be reminded.
It would be amazing to see a gardening video. Maybe even a separate channel?
That garden is so cool. Your whole setup and approach in general is really admirable.
Thank you for this!! I’m just discovering how to properly use my food processor. Great tips, especially the peanut butter!!
If you wash the butter in several changes of ice cold water (in order to remove all the buttermilk), it will last much longer.
Good luck!
@@Caprifool Thank you for your really detailed reply....I am going to try this for sure! Happy holidays to you.

I love my mid sized processor from the 90's. Finding replacement locking lid and correct blade was the Bain of my 2020 experience. I now have parts for 4 different processors but no complete one. Folks really need to correctly identify their listing. I know what I have, why don't they know what they have?!?
You can use a coffee filter, rather than a bulky towel, to cover your fermenting cream and buttermilk.

I notice your food processor had moisture inside when you took it out of the cupboard. This often used to happen to me because the plastic parts are really difficult to dry properly. It can leave you with a mouldy smelling appliance. The easiest solution is to store the parts loose in the cupboard. Only reassemble them when you actually want to use it again
where did he take out of cupboard? looks like he just washed it?
@@moose7266 he could have done either. I never fully close up mine, I put the lid on, but do not put the chute in place so air can get inside the bowl and it just sits on my counter in between uses as this will make it easier for me to utilize and I do, several times a week often, but certainly at minimum of once a week.

Great video! Love the marinated veggies! I was told to never keep raw meet, after cutting it, in the fridge because of bacteria, especially chicken, so I am not convinced with keeping the mixture overnight.

I have this same food processor, I thought it was going to be an excess on my kitchen, it has become my most used appliance. It is a BEAST! P.S. I have the same scale too! Tip for the bread dough - put in the dry ingredients and set the processor going. Then add the water slowly through the feed chute. That way you can see when it comes together.
You crack me up. So funny but very informative. Just bought the fermentation book.
Butter stock peanuts make fabulous peanut butter. BTW, KitchenAid has food processors too, and I personally like them better.
I'd like to try making butter at least once. Can I use my unflavored kefir for the ferment?
Also can I put the salt in the processor?
Have you ever made cream cheese with kefir? It's to die for.
I've successfully used both yogurt and kefir to culture the cream for butter at different times. Both ways were delicious and worked equally well.

I've made perfectly wonderful butter without ferment. Just beat the h out of cream, drain off the whey, shape, and refrigerate. It's especially good in small batches, specifically seasoned, for a dinner party.

whole food processor master class right here, great!
Loved this. What temp should water be for defrosting frozen pack of chicken. Many thanks. 😊
0:27 I have thise same little one. It's perfect size for an 8inch pizza. 7:45 While nice, the metal blades work just fine, especially if you can run it in reverse like the tiny one.

Looks awesome. Can you use the same bread recipe for regular loaf bread?
I have a question on the peanut butter, does it need to be stored in the fridge or is it ok in the pantry? Thanks for all the great ideas! I’ll be trying the baguette’s also.
I would store it in the fridge because of natural oil that can go rancid, but if not hot in the house and you know you will eat it in couple of weeks, it might be okay. The store bought ones have stabilizer and probably conservant.
I don’t know why I comment before it’s over lol! But the cast iron and ice is such a game changer for me!
Thanks so much I just made homemade Nutella in my food processor and it’s so much better than store bought
