Greek Style Zucchini Chips: A Crispy & Delicious Appetizer

- These fried Zucchini Chips are commonly served as an appetizer in Greek taverns across the globe. Follow my easy recipe to make these crunchy chips at home.

Ingredients
3 zucchinis
1 cup (150 g) all-purpose flour
1 cup (150 g) finely ground semolina flour
Salt to taste
Dried oregano to taste
Vegetable oil for frying
Bowl with cold water
Optional seasonings: sumac, granulated garlic, herbs
Serving Sauces:
• Tzatziki
• Shawarma Sauce
• Marinara Sauce
Instructions
Slice the zucchini into 3mm slices or into sticks.
Sprinkle some salt on top. The same amount that you would sprinkle on fried eggs. Set aside while you make the flour coating. Also, pour the oil into a deep frying pan and heat to 375 °F.
In a shallow baking pan combine the semolina flour, all-purpose flour, and a teaspoon of salt. Mix together to combine.
The zucchini will have released some moisture, and this will help the flour mixture stick to them so, do not pat them dry.
Toss the zucchini in the flour mixture.
Quickly dip each zucchini slice/stick into the water and shake off the excess then, carefully drop into the oil. Do not crowd the pan or the oil’s temperature will drop and the chips will become soggy.
Fry until golden all around.
Using a slotted spoon or a frying spider, lift the zucchini out and allow the excess oil to drain back into the pan.
Place the chips onto a tray that has been lined with paper towels and season with salt, oregano, and sumac or your choice of seasonings.
Serve immediately with your favorite sauces/dips. Enjoy

Hey Dimitra, I love your videos! I'm a retired chef, and I've actually learned a few new things, which is always very exciting for me. I've tried a few of your recipes, notably the spanakopita, and I was so impressed. I love the way you demonstrate the steps so simply. When I saw you post this recipe for fried zucchini, I knew I had to try it. The combination of semolina flour and all-purpose flour is something I would not thought of, but I'd be willing to bet it makes a huge difference in terms of crunchiness. Dipping the zucchini in water briefly immediately before frying is a technique I've never heard of. I can't wait to try it! I've made fried zucchini in the past, but there has always been a missing element, I thought. This could be it. I'll let you know for sure! Thanks, as always.

another safer way to cut the zucchini and other veggies is to use a food processor. most have an attachement that you can add to the top and then you push your veggies through the blade. i tried this method to slice plantains to make plantain chips and it works wonderfully and no fear of cutting your finger!

Thanks so much. Greek chefs in greek speaking channels claim to use semolina fine grade (simigdali psilo) I tested and it doesnt work. I have just tested semolina flour as you suggest and got finally taverna like zuchinnis. Semolina flour is much more hydroscopic and this make a difference. Regards from Athens 😊

I prefer adding the oregano + some paprika in the flour mixture.

I love love LOVE making these. The only problem is, they DONT MAKE IT TO THE TRAPEZI because people eat them as soon as I fry them and put them on a paper towel 😂😂

I have tried zucchini chips in a Restaurant and they were beautiful really like French fries very crunchy. I have tried your recipe it is good but they get soggy very quickly!

Use potato or corn starch for crispy texture.
I fried some zucchini rounds and then put them in my dehydrator, they came out like potato chips.
What about a gluten-free version? The flower contains a lot of gluten and it is impossible to use for people with gluten sensitivity. In my case I am gluten intolerant
Why dip them in water prior to frying?
This makes them very crispy

If you have diabetes, you should already be aware of substitutions you can make to your recipes.
The flour amount is so insignificant here. Also you can use potato or corn starch or use only Samolina and see how it will turn.
