CROCKPOT POT ROAST: Classic Slow Cooker Pot Roast Recipe

  • This Classic Crockpot Pot Roast is the perfect go-to recipe when you need to cook the family a meal, aren't sure what to make, and you don't have a lot of time. You can throw all the ingredients into a crockpot in the morning, let it slow cook all day, and then come home to enjoy it in the evening. It's an all-in-one meal with the most tender meat, alongside perfectly cooked red potatoes and carrots. Read on for the delicious recipe.
    Pot Roast
    3 lbs. chuck roast
    approx. 2 lbs. baby red potatoes, cut into halves
    4-5 carrots, peeled & cut
    1 medium sized orange, chopped
    2-3 celery stalks, chopped
    salt, to taste
    seasonings of your choice
    (I use 1 Tbsp. chile powder, 1 Tbsp. cumin, fresh rosemary)
    2 bay leaves
    3 garlic cloves, minced
    2 Tbsp. butter
    2 Tbsp. flour
    1 1/4 cup beef/chicken stock (you can also add 1/4 cup red wine to 1 cup stock)
    Rinse meat clean and pat dry with paper towels. Add seasonings and rub into meat. Let sit 10 minutes. (This is a good time to prep your vegetables.)
    Heat large skillet on stovetop with enough oil to coat the bottom. Sear meat on each side until outside is browned. Add chopped onions, potatoes, carrots and celery into crockpot. Place seared meat on top. Deglaze skillet with butter, add minced garlic. Mix quickly. Add flour and continue mixing, scraping the tidbits on the bottom of the pan. Pour in beef/chicken stock and let cook a couple of minutes until gravy thickens a little. (It won't be too thick.) Remove gravy from stovetop and pour over meat in crockpot. Place bay leaves and fresh rosemary sprigs on top. Cover and set crockpot to Low. Let slow cook 8 hours until meat is fork tender, and enjoy!

    Your house must have smelled amazing! I love coming home when I have something cooking in the crock pot. The aromas are like a welcome hug when you walk in the door.

      You are so right about that! Coming home to that aroma is why I use my crockpot as much as I do. I feel sorry for my dog, though. She smells it all day & cannot wait for us to get home. 🐶❤️

    Guys one other massive trick. There's this seasoning called Italian seasoning by 5th season. I don't remember where I got it. I got it years must have been many years ago I think it was a dollar like 10 years ago but it's still good. And i would not know if it's the same as all the other "italian seasonings." I'm not Italian. If you add just a small amount...like under half a teaspoon for a very very large 7 qt pot roast it will make it taste twice as good. You just need a very tiny amount. If you put too much ur pot roast will be ruined. So if u can't find this version maybe just get any Italian seasoning and try it. It's so so so ridiculously mind blowing. I promise there's nothing like it. I don't know why it's so potent.. I have nearly a full .87 oz bottle and it will probably last me forever. It says it's mainly thyme and oregano.

      Thank you! You’re always so sweet. I was feeling really proud of how my herbs were growing one day and bragged to a friend of mine who’s a serious gardener. And she replied, “that’s because herbs are basically weeds.” There went my pride! 😂 No wonder my herbs were doing so great. Meantime, my tomatoes were struggling and my jalapeños looked like little balls. There’s definitely a learning curve. But it sure is fun. And, as I mentioned in the video, it changed the way I cook.

    Looks great Marcy, especially with you adding the "New Mexico" touch of red chile and cumin! Have you ever tried substituting a can of Campbell's French Onion Soup for the beef broth? Seems to add some more depth to the flavors...BONE APPETITE!!

    5:10 - Very nice garden but.......Where's the Cilantro? Is it just easier and cheaper to get fresh at the local grocery store? We both know that it's a "key" spice for New Mexican food right? 😊

    I got nothing against this cooking at all actually I watched this to learn. but I just wanna say if ur a bit lazy and not an actual chef (like me) it really helps to have heinz beef gravy on hand (heinz is the guy that invented ketchup and a lot of others). And it tastes better to use mashed potatoes instead of boiled potatoes (more fattening tho). My version is a little more fattening but i also control my carb intake. It's really all up to you. I also put a lb of sautéed mushrooms a small can of tomato sauce. As long as you try to stay very closely similar to how she does it you're gonna have a great meal.

    Gotta love a pot roast, June Cleaver brought up the Beaver on that! Yours looked so good! I LOVE your herb garden, a I’m so jelly that You have the weather to grow that ,it would struggle here in Albuquerque but it would grow just with a lot of TLC! You must Have the magic touch like my mom she can grow anything except for marijuana !She didn’t have much luck trying to do it! Ha ha Ha ha ha! Once again great job!

      I love my little garden. I only wish I had room to grow more things. Pretty soon I have to cover it because the heat is too much for it in the peak of summer. Cracking up about your mom trying to grow marijuana. I'm sure it was for medicinal use. Thanks for the comment.

      I always thought they were the same thing, but a slow cooker is a pot that sits on top of a heating plaque. Hope that makes sense. I’m picturing my mom’s slow cooker in my mind as I describe it.
