This looks delicious but I would worry that the ground beef would still be pink in the middle. I am going to try this with already cooked seasoned beef, and instead of parsley I'll add cilantro. I'll also add a slice of mexican cheese before folding it. I'll fry in a mixture of butter and olive oil, but not too much. The meat will already be cooked so all I need to do is saute the tortilla on both sides till brown. Thanks so much for the idea!

This is like the Egyptian "Hawawshi", only we use a different type of bread which is a little thicker than tortilla and much softer in the inside so it takes more time to cook and also the meat will melt and mix with the inside of the bread. It can be cooked in the oven wrapped in parchment paper or just on the stove top same way like you.

Be careful when using cilantro if you offer them to guests, cilantro (coriander) tastes like soap to approx 20% of the population due to a genetic variation, this will undoubtedly destroy the flavour for them as I know too well, for decades no one would believe me when I kept telling them some foods tasted like soap until about a decade ago when the discovery was made.

There’s a variation of this in every country I’m sure. Former USSR were doing it from scratch, you do the dough and kind of deep fry them, but you have to close of the edges together. It came to us from eastern countries and we called them Chebureky

The best way to mix anything in something like this is to mix your egg, dry ingredients and wet ingredients together first in a separate bowl and then into ground beef I found out over the years. Ingredients get distributed more evenly that way. I also mix it into the ground beef on a flat surface like a plate or cutting board or mat. It's soooo much easier and faster and easier on your hands and wrist and less work.
