I've been making these for years with slight variations..... use corn tortilla instead and deep fry them. Cover them woth a green tomatillo salsa when ready to eat and OMG! Delicious!!
I thought the same, the meat doesnt get cooked enough with the frying time being not exposed to the oil. In Pueryo Rico we cook the meat before and it is a lot more savoury and less risky if the meat is well cooked.

Well, I just made this, BUT replaced the hamburger meat with Chopped Beef (the kind you have with a chopped beef sandwich), added the chopped onion, and mozzarella, but skipped the paprika, and it was SUPERB... When serving, I added a small serving of barbecue sauce to the plate for dipping, and it was great. Thanks. You got LOTS of great video's on your channel, keep up the great work.
Helly , these are awesome!!! Surprisingly, the meat cooks through and that was a concern. But, no worries. I’ve even added a small can of diced green chiles, completely drained. superb!!
If you'll notice, it's a thin layer of meat inside the tortilla, so there's no need for concern about the meat not being adequately cooked. (The thickness of the meat appears to be between 1/4" and 3/8" before it's been cooked.) The fire is on a low setting while it's cooking, and the steam created inside the folded tortilla also assists in cooking the meat. If you want to, you could always put a lid over the pan for a more concentrated cooking effect. Since it's a thin layer of ground beef, there won't be an enormous amount of grease from it, especially if you select a leaner fat-to-meat ratio of ground beef. What grease there does happen to be, inside, will be soaked up by the inside of the tortilla (making it extra tasty). If you opt for the multiple-folds version, the grease inside will be less noticeable.
Made this tonight. Let me assure you that the meat is cooked through and through 5 min on each side on medium low heat!! Very tasty. I would add cheese to both sides!!
I'll have to try this . I fry my tortilla's on one side and after add fried chicken pieces and add taco seasoning. And add lettuce,tomatoes, cheese fold and fry both sides .
I made this for dinner tonight. It was very good. I overdid the onions, I think. I think either the yellow onion or green onions next time, not both. I also added a bit of garlic and some oregano and a bit of chili powder. Not much because hubs doesn't like spicy. I spread the hamburger mix on half of the tortilla very thinly. The hamburger cooked through, no problem. Helly's not kidding about setting the temp at medium low after getting your pan hot, lol. I used my 12" cast iron and let it heat up while filling the tortillas. Medium was a bit too high. The first batch got more than a little toasty, lol. I like this recipe. I can see using ground pork and pineapple for quesadillas al pastor as well. Thanks so much for this recipe.

This is NOT Mexican food but her North American variation of original Chinese bread. Please stop making another cuisine or suggest people to do so. I cannot rate this recipe highly enough! 10 out of 10! I decided to cook this on a whim today because it looked so easy and quick. I did make a couple of substitutions: Mission Cauliflower flour tortillas, 93% non-fat ground beef, 5 sliced cloves of garlic and Kraft Parmesan cheese instead of mozzarella. I cant eat wheat due to gluten sensitivity but I can use the tortillas that r gluten free..I agree thst the.meat needs to be cooked first It will not cook in 5 minutes on each side and its hamburger that can carry salmonella or other meat carrying bacteria..too much surface area in hamburger..
Quesadillas de picadillo, the only difference in mexico is that we usually deep fry them so the meat cooks all the way without burning the tortilla too much, but that’s the name of the dish :)

Ground meat(cow, pig, chicken, turkey) can require less cooking time than a slab of meat. Also notice how thin the meat is. The thinner the meat the less time it takes to cook it.🤷🏼♂️ I figured it out growing up and learning how to cook in the 1960's.
We used to make something very similar to that first one. We used to call them Mexican Pizzas. We used 2 smaller tortillas instead of a big one folded in half.
This is pretty similar to Çi Börek or with its original name Chebureki. It is a very common dish made in Türkiye by the Turkic immigrants such as Crimeans or Tatars. You can put bacon, ham and different kinds of cheese in it or you can do it vegan way with spinach, french onion and tofu or whatever you like :))
Looks great if you don’t mind undercooked hamburger, and if you are picky about that then you can always pre cook it, personally I prefer it a little pink. Also you could mix some A-1 steak sauce in the mix to boost the flavor
Try not cooking on the high setting. This should be cooked on medium heat, slowly. I used my wok with a cover to make sure the meat was thoroughly cooked. It only took 5 minutes per 2 tortillas, total of 4 tortillas for the recipe above using the poster's measurements.
You pretty much made Chimichangas. My mom would make them for us as a quick meal. But she would cook the meat first and fold the whole tortilla in to a square and fry. Topped it off with sour cream, salsa/pico de Gallo, lettuce, and shredded cheese. Super yummy 🤤

Is the inside cook? Just wondering for 5 minutes is very short time for meat filling. Will try but most likely will cook the fillings first before putting it in the tortilla.
I thought the same thing, but after playing it again I realized how thinly spread the meat mixture is, and without the hugely bulking up of additional veggies, the hot pan, oil, and the tortillas being bulk, not homemade, there might not be a need for meat to be cooked separately. The one curious thing I noted was that even with just the raw meat mixture going into the tortilla, there wasn't any grease overwhelming that thin crust of golden crunchy tortilla. I guess I am of 2 minds on this: I'll experiment a bit and make this recipe both ways, with hopefully a good outcome each time. This is one of those recipes someone else thought of and bothered to show us. It's not a legal argument, it's a food suggestion so make it how you will. I do think they looked a tiny bit dry, so I'm hazarding a guess as to the overall fat content of the meat being used. I guess you could lower the fat content by using either ground turkey, chicken, or very lean beef, but I like the flavor of higher fat content, since I don't eat it all the time it feels like a very tiny bit of cheating. The only thing I really wondered was whether all the cutting and folding of the tortillas seems too much "pickiness" (?) if I'm really trying to save time. Still and all, I haven't tried it yet but I just bought two packages of tortillas, so I have what I need to check it out and enjoy.

Families have been making these "Patty Tacos" for years and years. These are TACOS! Oh and that's not enough time to leave cooking ( people could get sick), you put raw meat, raw eggs. ( we dont use eggs). Can use shredded carrots, potatoes and eggs of course to stretch out the meals. Having the tortilla folded in half ( after having *cooked well) open and fill with shredded lettuce/cabbage, cheese, peas ( optional) sour cream or guacamole on side or both. Normally use white corn tortillas vs the angel flour tortillas. You did get great coloring on tortillas ' yet meat doesn't appear thoroughly cooked. Using less meat or more oil when frying should solve the undercooked meat issue.

You pretty much made Chimichangas. My mom would make them for us as a quick meal. But she would cook the meat first and fold the whole tortilla in to a square and fry. Topped it off with sour cream, salsa/pico de Gallo, lettuce, and shredded cheese. Super yummy 🤤
I think cooking the meat prior is a better idea. They look delicious.
Yours sounds better. Bc i am like tortillas cook fast then hamburger. I think meant needs to be cooked first
@@meredithgallegos1898 Yes, definitely cook the meat first & drain the excess oil...will prevent tortillas from absorbing the oil on the inside & dripping.

Great recipe. I was concerned about not cooking meat first, but tried it anyway. Taste 👅 great. But I cooked a little longer due to meat not being cooked first.
When I did it I didn't use quite as much meat and it turned out well done.

Look delicious. Think I would part cook the meat first also would maybe add some chopped olives and some chopped red peppers and I would use extra mature cheddar cheese. Serve them with a nice fresh side salad and avacado n mint sauce. Lucy from Scotland. Xxx
We Turk´s have somthing similar but in the oven and open called lahmacun. But this is also a nice recipe.

I thought the same thing, but after playing it again I realized how thinly spread the meat mixture is, and without the hugely bulking up of additional veggies, the hot pan, oil, and the tortillas being bulk, not homemade, there might not be a need for meat to be cooked separately. The one curious thing I noted was that even with just the raw meat mixture going into the tortilla, there wasn't any grease overwhelming that thin crust of golden crunchy tortilla. I guess I am of 2 minds on this: I'll experiment a bit and make this recipe both ways, with hopefully a good outcome each time. This is one of those recipes someone else thought of and bothered to show us. It's not a legal argument, it's a food suggestion so make it how you will. I do think they looked a tiny bit dry, so I'm hazarding a guess as to the overall fat content of the meat being used. I guess you could lower the fat content by using either ground turkey, chicken, or very lean beef, but I like the flavor of higher fat content, since I don't eat it all the time it feels like a very tiny bit of cheating. The only thing I really wondered was whether all the cutting and folding of the tortillas seems too much "pickiness" (?) if I'm really trying to save time. Still and all, I haven't tried it yet but I just bought two packages of tortillas, so I have what I need to check it out and enjoy.

Looks yummy, but does the meat cook through? That would be much better done in an air fryer than on the stove.

я смазываю края лаваша яичным белком хорошо так, чуть подождав, пока белок слегка подсохнет, слепляю края, прижимая ребром ладони к столу (как чебуреки). Сок почти никогда не вытекает 😉

Families have been making these "Patty Tacos" for years and years.
These are TACOS!
Oh and that's not enough time to leave cooking ( people could get sick), you put raw meat, raw eggs. ( we dont use eggs). Can use shredded carrots, potatoes and eggs of course to stretch out the meals.
Having the tortilla folded in half ( after having *cooked well) open and fill with shredded lettuce/cabbage, cheese, peas ( optional) sour cream or guacamole on side or both. Normally use white corn tortillas vs the angel flour tortillas.
You did get great coloring on tortillas ' yet meat doesn't appear thoroughly cooked.
Using less meat or more oil when frying should solve the undercooked meat issue.
Yessss...Taco Bell makes these.....lol
