HOW WE BRINE OUR SALT BEEF AND PASTRAMI

AT LONDON BEIGEL AND SALT BEEF BAR
We take great care in crafting both our Pastrami and Salt Beef. MRS SALTY takes prepares both dishes with love, and devotion, which requires meticulous attention to detail. MRS SALTY's process begins by selecting the finest cuts of brisket, which are then trimmed, shaped, and layered for optimal texture once cooked.
The brisket is then immersed in a brine for a period of 14 days, ensuring that every inch is infused with flavour. After brining, the brisket is washed six to seven times to eliminate any chemicals and ensure a clean product.
Next, the seasoned brisket is allowed to rest for an additional day before being smoked for seven hours. Following smoking, the meat is given another overnight rest before being baked and steamed for four hours, resulting in an exceptionally flavorful and tender final product.
Finally, after yet another overnight rest, our Pastrami and Salt Beef are ready to be served. This entire process spans an impressive 20 days and represents our unwavering dedication to producing the highest quality meats for our customers.
