@45:00 I would think that the flickering and "jitter" of the position is purely a product of the low neuron count sample size. If you could sample all of the place field neurons I imagine that the resulting intersection would be much smoother and more distinct.
I also can't help but think that the only reason we see place cell sequences of 2D trajectories is purely a consequence of putting the animal in a 2D environment. Put it in a multi-level environment and you'll see 3D paths.
