Aha! This starts off in a manner similar to that of the old, British "greasy spoon" café dish of egg and chips (which is still very much available. Here, the customer gets one or more fried eggs and a portion of chips (fries) which they can cover with salt and then drown in malt vinegar, ketchup or brown sauce (or a combination of those) to taste. The acid taste of the vinegar is followed in the olives, and the sliced tomato replaces the ketchup. The brown sauce is omitted. Only the thyme and the cheese are new. Your version is more tasteful (and tasty), I must say!
