    INGREDIENTS (makes 4 servings)
    800 grams chicken wings
    1/2 teaspoon ground black pepper
    1/2 teaspoon salt
    1/4 cup light brown sugar(packed)
    3 tablespoons soy sauce
    1/3 cup sake
    1 teaspoon ginger juice (grate the ginger and squeeze out juice)
    4 grams garlic garlic (~1 medium clove, grated)
    1 tablespoon black vinegar (or balsamic vinegar)
    1 tablespoon potato starch
    vegetable oil (for frying)
    2 teaspoons toasted sesame seeds

    I was looking for Japanese soy chicken wings that I had in a Japanese restaurant(Japanese owner) years ago. It looked grilled or barbecued but glazed with soy coloured juice.. This could be poured over sauce. It wasn't much, just glazing over the wings.
    I thought it was very much like Chinese soy sauce pan fried wings these days..(which is marinated in soy sauce and crushed/minced garlic and sliced chilly pepper. Then fried in a little oil). But not quite the taste. Thanks for this recipe. Happy to subscribe.

    I was stationed in Yakota and missed the wings place by Fussa. Never knew what it was called until a couple years ago and now I can make these at home! I missed these so much! thank you! 😊

      Better late than never😉 It won't taste quite the same (kinda like how dried apricots don't taste the same as fresh ones) but it will work.

    good lord this sauce is so insanely good - ever since I made these I’ve been using the sauce alone instead of teriyaki sauce in my weekly meal rotation lol 😂 the touch of vinegar really makes it! thinking of adding chilli powder and Sichuan peppercorn powder into it next time to make a mala version

    Can i use balsmaic vinegar as an altemative to black vinegar?

    Hi! I really like to try your recipe. Do you have any suggestion to replace Sake? How about apple juice and lemon juice?

      Sake is a tough one to substitute as there aren't really any ingredients with a similar taste. It is mainly added to the sauce for umami. Sake is not acidic so I definitely would't not recommend adding apple juice or lemon juice as they will make your sauce sour. The best substitute will be water. It won't add any benefit to the sauce, but it won't change the balance of tastes either.

      Hi Nannerchan, you can use cheap balsamic vinegar (i.e. not the real stuff that costs $100 a bottle). Hope you're having a good Sunday!

      @@johnyrangr there are many variations of black vinegar on amazon, simply it´s brown rice vinegar. I didn´t know what it is, so I searched on amazon for it :)

      Black vinegar can be made from brown rice, but that’s not were it gets its color from. The color is due to Maillard browning which is is a result of fermentation and aging. This is why balsamic vinegar makes a good substitute as it is also aged.

    Tried this recipe and it's so good! Substituted water for mirin since our local hrocery doesn't have mirin :(( still tasted good though!

      I'm so glad to hear it! Thanks for taking the time to let me know 😀 Aside from the flavor, mirin adds extra sweetness and umami. Sake with a little extra sugar will provide a similar taste.

    Is it possible to avoid Sake, and use something else ( like non-alcoholic) for marinating ?

      Hi Sabith, not a dumb question at all. Since alcohol has a much lower boiling point than water, the alcohol in the sake (and soy sauce) burns off when you cook the sauce. You can learn more about why sake is added to food here. ua-cam.com/video/C2p6MN4EVeA/v-deo.html

      Hi Furu ki, unfortunately there aren't any great substitutes for sake, but you could substitute it with water. It wan't have quite the depth of taste as when made with sake, but it will still be tasty!

      @@furuki60 Hi Furu ki, "cooking sake" is usually very low quality alcohol that they add flavorings and salt to. The salt is there to make it undrinkable but this causes problems in recipes because they end up being too salty. You would be better off using water.

    Can I substitute ANISADO WINE for Sake?

      You could, but it's not a very good substitute for sake. Sake doesn't taste like anise, and the reason for adding sake is for the amino acids it contains (which gives the taste of umami).       You will want to use Japanese soy sauce such as from Kikkoman. The flavor is milder and more delicate than other types of Asian soy sauce.

      @@themaskedvloggerph8257 Ahh gotcha, use the dark one. Unless I specifically call for Usukuchi Soy Sauce, "soy sauce" in my recipes refers to dark Japanese soy sauce.

      Hi ElIjah, the sake is in the sauce to add umami, and by boiling it you're burning off all of the alcohol if that is your concern. To reproduce the umami imparted by the sake, you could just add a bit of MSG instead, but it's not going to be as subtle.

      Hi JayArEmDee, I wouldn't recommend it. Mirin is much sweeter than sake, so it will make the sauce too thick. I generally don't recommend cooking with mirin and calibrated this recipe to work with just sake because most of the stuff out there is fake (i.e. alcohol with sugar and flavorings).

      You can read more about the name on my site, but it's not about not providing recipes (that would be kinda pointless). It's about me teaching you techniques so that you can eventually improvise your own dishes at some point. I know some people don't get it, which is why I've thought about changing the name, but the website's been around for over 13 years and all the experts I've consulted have told me it would not be worth changing given the hit in traffic I would take for changing the domain name.

      It depends on how you're serving them and how much the people eat, but this allows for about 200 grams (half a pound) of wings per person. 100 grams of meat (1/4 pound) of meat is a typical serving portion of meat, so keeping in mind that about half of the weight of wings is in the bones, this makes about 4 portions.
