Hi Flo, I’m from the east side of China guangdong, an area called Chaoshan. Char Kway Teow is one of the signature dishes in my town. ( char kway teow sounds so much alike the dish in my dialect lol) Seeing you make this dish makes me so nostalgic!

Hi Flo/Dude. This is a new family favourite. We’ve been using the sausage mainly for big weekend breakfast (with baguette, pate, and egg). Now I have an excuse to get jumbo prawns (a little goes a long way in this lovely recipe). I’ve looked everywhere for fresh wide noodles here in Calgary and have so far been unsuccessful. This in itself isn’t a bad thing because we make the recipe once a week with new “thinner” fresh and dry noodles. It’s lovely with everything frankly. I’m tempted to make the noodles myself (another “covid” project to challenge myself). All good challenges when we get to eat such wonderful food. LOVE the shrimp, sausage, egg combination with a very light sauce and wonderful noodles. There are never leftovers in our house. Surely amongst our favourite noodle meals yet. ❤️ Calgary…

I always vacuum seal it back up and put it in the fridge. If you don’t have a vacuum sealer, put it in a resealable bag, squeeze all the air out and toss it in the freezer. If they are fatty enough, they don’t even need to be thawed to cut through when frozen. 😋
This particular pack, I found at Costco: Kam Yen Jan. But the brand I usually buy is Dollar Food. They still have a store front in Chinatown where the sausages are hanging but you can buy them in the vacuum sealed packages in the Asian markets.

I have Chinese chives all over my front yard along the front of our house. They are invasive, but oh so easy to grow! I can't kill them--they grow in spite of my attempts to thin them out. I love them. There is no way to get rid of them once they take hold in your garden, not that I want to get rid of them. I started out with just a few sprigs of Chinese chives and they are all over the place out front. I have a question: Do you remove the root end and the bean from the bean sprouts? I've always left them on, but maybe I just don't know any better?
I'm a CKT lover since my childhood till now, the flat noodles looks a bit wider I think 10mm is perfect size for cooking. Most hawkers use cockles and sliced fish cakes which are more favourable to diners in Malaysia instead of pork sausage. Anyway your dish is looks yummy and tasty with less oil.

A couple of years later the stall was named as number 13 best Street stall in the world...... Uncle now has his own shop.....and you'll be waiting an hour to get served.
Nothing beat fresh variety, the dried sticks are not the same. Cooking at home without high flame stoves, you can ' cheat using coconut oils' as it achieve burnt temp very quickly. The flavour other than high flame is from garlic chilli paste. The dark/ soy sauce, chives, eggs and various add ons I,E. Chinese sausages, fresh prawns, pork lard cubes and chopped garlics all combined and super quick fry ups but add fresh sprouts last ( don't over kill this).
Is that the same as garlic chives? I planted them at my other house, and they spread everywhere. If I was going to plant them again, I would put a large clay pot in the ground to plant them in. Hopefully that would keep them from spreading everywhere.

Hi Nabeelah, that’s what I do. I portion the noodles and freeze them in separate bags. When I want to use it, I defrost (heat mode, not defrost mode) little bit in microwave (30 sec), and separate the noodles.

I went to our only Asian grocery yesterday. The only fresh noodles they had were egg noodles and udon. I looked in the dry rice section and all of the rice noodles were too skinny, I wonder if there is a way to order them online or maybe make them from scratch? What are the actual noodles called?

Char kway teow was brought to Malaysia by teochew ppl from chaoshan. So same roots but we add sambal(cili paste) here
We Malaysianised any food that comes to our shores. We actually improvised it according to our local tastebuds.

T&T but it does not say Kecap Manis on the bottle. Just says sweet dark soy. ABC brand. Hope that helps!

Kekap manis. Thick, almost treacly, sweet soy sauce. Can't cook Indonesian food without it.
Can just put them in boiled water to separate the frozen noodles

So if it does stick do we just add a 1/2-1 tsp of oil?
If your wok is hot enough, it shouldn’t stick and if it starts to stick, it is ready to eat!

河粉 is the Chinese. They are generally referred to as flat rice noodles.
