Tbh I've been enjoying the career mode man, but at the end of the day it's whatever you wanna do you know? I got a suggestion that maybe could make the game more difficult. You can try playing the career on hard and tweak the sliders to make the game more challenging, I feel like it could work. Especially making the ai throw a bit less so they don't gas themselves out so easy lol

For the next career i would recommend a kick oriented career like you know a lot of jumping spinning kicks knees , in a stacked division

More kicks would be fun though, knees, spinning kicks, jump or switch kicks, hook kicks.
