Just had this and it was very nice but still think it takes a fair bit time to make. There is recipe for butternut squash risotto that is fine in the oven which I might try. I also do a mixed grain and porcini mushroom risotto in the wok that is quicker and can be reheated a few days later.
I like your channel very much you are a great presenter thought I might be getting to scotland this spring to do some bike touring but its looks very doubtful with this nightmare virus.
If I had to place a bet Paul I'd say the end of May might see us allowed to travel between Level 2 areas in Scotland, but probably not from Level 4 or outside the country until end of June.

I didn't make the garlic thing clear did I Terry - sorry. The cloves inside just squeeze out of the skin. And you're right, these are just minor diversifications while we have to stay home and cycle locally. I'm hoping to get back to something more normal soon - but aren't we all!

Hi Sam - sorry for not making that clear. It's the butternut you can do in advance (or the tomatoes). The risotto base you have to do fresh every time, and that takes about 40 mins. It's not quite as good as some others for the cook-then-ride idea.
