I need to learn sharpening with stone on the bench... I am a hand holder with the stone when sharpening, but imo seems like people have more control with stones on the bench. What will be hard to learn to do is use the off hand to apply pressure (walking fingers up and down the blade.) while sharpening. When holding it by hand I naturally use dominant hand to apply pressure. I just don't understand the relax on the push and pressure on the pull? I only use edge leading. Not saying their way is not correct, but either way will work in the end.. Some say edge leading to remove burrs, ime one can create a burr with edge leading or edge trailing. If I normally used edge leading I do edge trailing for removal of burrs on the stone .

IMO they each have their advantage, I learned holding the stone in my hand however sharpen several ways as I like the challenge of learning new techniques. Never used that technique but have tried and didn't do anything to improve my edges, I use same pressure on edge trailing and edge leading strokes. Edge leading alternating passing with light pressure will remove burr other than that a burr will form if all strokes/passes are either leading or trailing. Example the sharpmaker, edge leading alternating passes won't create a burr with light pressure. Edge leading with correct angle will shear burr off, edge trailing more along the lines of flipping/fatiguing.

Great videos! Following and learning a lot. Do you spray the stones with just water?

Thank you, appreciate it! I use water with a few drops of dish soap, plain old water will work just fine too.
