    this is a great accessory!! Even when I don't need it, i find a way to use it. this thanksgiving I used it as a charcoal holder when i used the rotisserie attachment on my weber. locked in my temps really well.

    Couldn't agree more Johnny! I love my SNS Kettle with the slow n sear. I'll be buying another slow n sear for my Weber kettle too. I didn't know at the time that I could get my SNS Kettle with the "deluxe sns" so I have the regular one without the bottom grate in it...Oh well, lesson learned! Thnx for the vid!     Spot on, Johnny! I had my Slow N’ Sear for about 2 months and i love it. My 22 inch Weber kettle stays hot much longer with the Slow N’ Sear compared to the original Weber trays and i’m pretty sure i save coal too.

    Hey, I can't thank you enough for making this video. It was absolutely fabulous. I am fairly new to grilling as I've only really had experience smoking meat on a big green egg. I moved away from my friend with the kamado style cooker so I bought a Weber kettle since read you can smoke and grill and everything. I tried the snake method for my first smoke on the kettle and it went ok but there were a few problems, user error of course, and so I ordered the slow and sear during my first smoke. I understood the concept but hadn't used it so I looked up your video and you covered so many things I wondered about and some I never would've thought. I appreciate that you took the time to explain things like where you put the water reservoir when not in use, as small as that may seem. Again, I can't thank you enough for saving me some protein in all likelihood and a lot of frustration. Keep up the great work!

I've been Smoking Stuff in everything but a tool designed as a Smoker. Wrapping Foil around those Rectangle Picnic BBQs, For 6 years I smokedbin one of those Suitcase Portable BBQ's.     Well, I finally broke down and purchased the Deluxe Slow and Sear bundle with porcelain tray for my 22" Weber Master Touch Kettle. I was one of those that felt I could do just as well with the baskets and bricks. Yesterday I did my first cook using the S&S. I did the herb crusted pork tender-loin following the S&S recipe. It came out fantastic and I look forward to more cooks using the S&S. Price is what kept me from buying sooner, but the special pricing recently swayed me, along with this video. Setting up the grill is so easy using the S&S. Next, I am doing some Filet Mignon per your video, I have already made the special butter per your recipe. Thanks, Ron

    I just use the snake! And for 2 zone cooking i just use the back long edge of a basket to hold about a third of the grill area of charcoal

    I too purchased a SNS deluxe based on "View to a Grill" recommendations but I never could get the benefits everyone raves about. It is good for burgers and smaller steaks but I have never been successful with indirect cooking of larger protein (whole chicken, tenderloiin, etc) since one side of the meat gets all the heat and must be rotated periodically to get both sides even temperature. For me it seems that it creates more work. I've asked SNS for assistance but they go silent pretty quick. Now my SNS sits on the shelf in my garage. The two weber charcoal baskets are much more versatile to me. Also, living at a higher altitude, reusing charcoal is not a great idea for me and something I have abandoned. I'd love to use the SNS on a regular basis so any help you or others can provide would be great!!!

      Hello Greg. I can help. Let me know what video you would like to see so I can just demonstrate how to use it on any cut of meat. I actually just did a beef tenderloin on my weber using the slow n sear this past thanksgiving however I did not make a video usning it this year but I do have a video I published last year around this time using my slow 'n sear. DM me on instagram.
      I will say that rotating is a good practice no mater what cooker you are using, I rotate in everything... even my oven.
      Reusing charcoal, I have never considered elevation, I live on the coast.

      Nah, you don't need it for low and slow even if you don't use the snake method. Just bank the coals to one side like the SnS charcoal basket would and light one end. You'll get the same result.

      @@Viewtoagrill I meant to respond to the comment where the poster said "I guess I NEED this for low and slow." I was trying to point out to him that he really doesn't need it.
      I've always found the SNS videos puzzling. There are a lot of people that agree with you the it is the best kettle accessory. I just don't understand how the "best" accessory is also the accessory that is completely unnecessary. The 22" kettle has so many accessories and it seems everyone picks the one accessory that brings nothing new to the kettle experience. For example, my personal favorite is the Santa Maria attachment. It adds a new style of cooking to the kettle. For those really looking for great temp control, something like the Venom would be a great accessory.
      Please don't take this personally. I really like your channel and videos. We just happen to disagree on this topic.

    Hello my friend I have the 26-inch Slo N Ser and the 22- inch Slow N Sear. I have the Drip 'N Roast Pan - Porcelain and love it. it is so easy to clean. and I have the Drip 'N Griddle Pan - Deluxe but not very happy with it. also, I have the Drip 'N Griddle Pan - XL for 26" it helps keep my weber clean, and I love it. and I have the SnS Grill Gloves too. there ok.     The SNS is very convenient but is really expensive for what you get. I made the same thing with a "bro n sear", bought a onlyfire water trough on Amazon, cut a 1/3 out of a pizza pan and get the same convenience and performance for about a 1/4 of the cost. Having said that, I do take it out of my kettle and use a Napolean charcoal ring and diffuser when I need more cooking area and longer cooks. It is very convenient, the price though is about 2/3 of the kettle itself. Just cant justify that cost.

    Maybe, but I've been cooking indirect for nearly 5 decades on the Weber kettle. A couple of $1 ($2 now?) firebricks + thoughtful fuel management can produce long and great cooks.

      Absolutely. Fire bricks can divide the kettle in to two zones, but I showed some things in this video that you cannot do with fire bricks(4 or 5 dollars now)

    Downside to the SNS is when you are smoking the area of usage is reduce by almost half. I bought a charcoal ring, snake method, and add a diffuser plate and I can use the entire kettle for smoking and get about 10-14hrs of cook time. It’s much more affordable and you get more space for cooking.

      I really like that idea! what do you mean a charcoal ring though? A means to keep the coal in a circle while at the same time setting the diffuser plate on top? What would you use as a charcoal ring and diffuser plate? thanks~

    I understand it makes 2 zones, but how is it different than a charcoal basket holder besides the little water pane? Similar shape of charcoal holder costs about $30. You can easily put a water pane in the indirect zone. Am I missing something here?

      Fundamentally they do the same thing. I have several videos of showing how to accomplish the same results with just the baskets or with no basket at all. I like the slow n sear because of all the reasons I went through in the video. To me it makes the whole grilling process easier and more enjoyable.

    I got my Weber kettle in August of 2020. Shortly afterwards I bought the SnS.
    I quickly was able to master the SnS as it is fairly idiot proof. I soon began to feel like I cheated myself by not learning how to use my kettle without the SnS. So I put it in the garage and practiced using the snake method, minion method, split baskets, one basket and coals directly on the grill.
    Once I felt competent with all those methods, I decided to choose the one that best fit my grilling/smoking style. For me it was the SnS. I use it for every cook now including rotisserie. I now own two SnS inserts.
    They are most certainly not needed and their price point is high, but for my cooking style they fit best.

      One more question Johnny (hopefully I didn’t ask this already!)
      Do you always leave the water reservoir out when roasting/baking/searing?
      I’m still trying to get consistent with my SnS (I have both the “new” original and deluxe. I’m wondering if leaving the reservoir out when trying to reach roasting/baking temps would cause a difference in temps due to the coals not being as bunched together if the reservoir was in there. Obviously the same amount of coals wouldn’t go as high either for searing.
      The SnS site says to leave it in when roasting/baking at 325-350. I’d prefer to leave it out when not doing a low n slow but wondering if it’s contributing to weird temperature fluctuations. Maybe I can leave it out but have my vents set differently?
      Any advice would be greatly appreciated! 🙏

    Hello, advice needed. I have just bought myself a Weber performer premium and a slow n sear. I’m having trouble keeping the temp below 300. I have my bottom vents almost closed and top 3/4 open, reservoir full and started with 8-10 lit coals. Any advice would be greatly appreciated.

      Couple of things… make sure you installed the bottom vent correctly and the little vent wing things are not bent upwards letting in more oxygen than you think.
      Watch my how to reach your target temp video… and the how to maintain target temp video. In both videos I use a slow n sear.

    With all due respect, I feel it's an unnecessary purchase. It's's too expensive and a waste. With good technique my barbecue has always tasted just as good with or without the S&S.

      You can defiantly get by without it. I have many videos showing setups without the SnS. The Weber Kettle is so versatile. For me, it just makes the kettle easier to use. Thanks for watching.

      Genesee Boy, it's the convenience. It really should be a standard when purchasing a kettle. Its not a waste of money, you dont need a grill to make BBQ, but you bought one for the convenience.

      I’ve had my 22” Weber for over 15 years and the SnS for over 5 years, cooked all different types and ways, and still come back to the SnS. Easy to set up, coal stacks work easier and the water trough is a great addition. I agree with the ease of use, but to dial in a good cook, why not?

      I have two thoughts on it.
      1) I think it’s a good product.
      2) It’s too darn expensive. lol
