If you want it ultra-smooth, use a wet grinder or melanger. I use the Premier Melanger for nut and seed butters, and it only takes a couple hours to get them as smooth as any commercial product out there. It also has the added benefit of intensifying the flavor, since virtually all of the flavorful compounds are released during the grinding process.

Hello, when using this paste for macarons do you tend to add sugar or leave it the way it is? :)
I don't add sugar. But I typically add this pistachio paste into sweet buttercream fillings, so I never needed more sugar.

is putting it in the water make the pistachios softer to grind in the food processor?
I try to avoid using a food processor because it heats up the food and changes its taste. It is always better to do this by hand with a mortar and pestle. When you do it by hand u probably wont need to add water. Try adding pistachio oil instead of water.

You don’t actually need liquid. There’s oils within the pistachios. They release after you blend them for a bit.

I believe this to be correct. During the pandemic, I created a rolls recipe in my food processor. After working the recipe for so long and finally coming up with a finished product that was amazing making the rolls was my therapy. My family and friends loved them so I made over a hundred batches in my food processor. I finally decided to get a mixer and use the bread attachment to make this recipe I made a hundred times before and it came out slightly different. The rolls were still good they simply weren't as soft and I then realized that it was the fact that the dough was not hot when I used the mixer. If you do it in a mortar and pestle then you won't have to worry about making too much that'll spoil, because that's a lot of work! LOL

If you make too much just freeze it. I piped mine out into silicone moulds at about 5grams each. Froze it then demoulded and put in a bag with the weight and date.

I am going to make this paste tonight. I plan to use some of this for gelato I am going to try to make for the first time in a few days. It’s seems as If I need to add more water to that so it can blended with the gelato custard. I do not want to add green food coloring. Will this paste make the gelato green?
I doubt it. It'll probably add very light green tint.
Can you use already shelled pistachios, instead of the ones in shells
Yes, absolutely!
Interesting, what happens if you roast them before grinding them?
You'll get more flavor from roasting the nuts, but it may darken the color.

You could roast pistachios in the oven, but I don't to get brighter green paste. And yes, you can definitely use this paste for ice cream!

How tedious to peel them.
That's what I thought too I don't think I'll end up peeling them. Yeah I'll get the specs in mine but I don't care. Standing there for half an hour just peeling them sounds just horrifying to me.. or use it bigger strainer that has bigger holes so the peels slide out of the holes instead of the one she's using.
How long is the shell life of the paste stay in fridge or room temperature ?
It'll be good in the fridge for up 1 week. And you can freeze for up to 3 months. I wouldn't store at room temperature.
maybe you can put it in the water again after roll in the towel, and the skin should be supposed to float???and it may save you 25 mins

But I’ll be honest, neither photo on the thumbnail is of the pistachio paste I made in the video.
I mentioned in the video that pistachios I’ve used in that video definitely produced darker green paste than with other raw pistachio brand. But I can assure you it wasn’t as brown as the pistachio paste made with roasted pistachios. Lighting plays a huge role in color cast in videos, and things look darker in my videos than they’re in real life. (I’m still learning with filming.)

The final product was brown. Clickbait. Down voted.
Bummer you feel spammed. That's not my intention. The final pistachio paste was NOT brown, but it was darker green. And in the video it does look darker than it was due to lighting. But you can see the true color in the intro clip where I stirred the paste in a white bowl (it was right by the window, so it showed the true color.) Thanks for your feedback though!
You sound like an entitled troll, if you watched the video you can see it's a deeper green not brown and that's because of the brand of pistachio she used and she even specified which one you can get to get a brighter pistachio paste
