Ok, so real quick, bulgogi is not marinated short rib. That is galbi, and it is delicious. Bulgogi (literal translation is fire meat) is marinated meat (typically beef), cut thinly and grilled. Bulgogi is typically made with different prime cuts(ribeye, sirloin, etc), not specifically the short rib. They are both forms of Korean barbecue, but they have different flavor profiles, though that's mainly due to different marinades designed to enhance the flavors of the cuts in question. And of the two, galbi tends to be more... premium. So if you go into a Korean restaurant and order bulgogi, do not expect short rib.

There's a cast iron device for campfire cooking called a "pudgy pie maker" that does this quite well. Temp is tricky to control, and it's square instead of round, but it gives the sealed-package sandwich with super crusty exterior when you get it right.

I too call them “bush pies” in Saskatchewan. But just learning now that they’re called “pudgy pies” elsewhere, I think that’s the superior name.

Oh. I was under the impression that the "bun" was actually a batter, poured into the mold base (which I thought was heated), the filling in the middle, cooked for a bit, with a final layer of batter on top. I suppose another idea would be to put a layer of dough in the bottom of the arepa machine, the filling in the middle, then another dough sheet on top of that. That sounds a lot easier and would hopefully come out better. If you got the means to do it, I'd give it a shot. I don't see the point in trying for myself if I couldn't eat them after, cause I have the duality of gluten and lactose intolerance.

A carnival food popular on Kaua’i is flying saucers. Pie irons are used- round and not as deep as the ufo iron but a similar idea. Flying saucers use regular sliced bread with a hamburger ketchup filling.

If you're like me, and don't have a stove but do have an oven and a teakettle, tangzhong can be replaced with yudane by simply pouring the water, heated to boiling, into the flour and stirring until combined, then left to cool. Same effect of making the bread stay softer longer, just a different way of gelatinizing flour.
