Whoa, yeah. A 1.011 FG is in the "your bottles will definitely explode" range. Definitely could only keg this one. Usually my FGs are between 0.998 and 1.004.
I’ve been using a Tilt hydrometer for a few years now. Word of advice, they are great to monitor the temperature but gravity readings are hit or miss. This is due to yeast, hop matter, and foam adhering and drying to a crust on the tilt. It skews the reading. I mainly use it to see that things are progressing and use an actual hydrometer once done. Brewing with fruit is tough. Did the strawberry flavor come through in the final tasting?
I was wondering the same on the strawberry flavor. Notes from their full recipe pretty much answers the question: "It had a classic peachy saison look to it and tasted bright and bubbly. Our fruit additions did come through in the final product. While it didn’t taste like lemons or strawberries specifically, the beer did taste fruity and refreshing. "
Sometimes I'll give my fermentor a shake if I think accumulated crud is throwing off my Tilt. Usually does the trick. Tilt monitoring gravity trends has been invaluable for fast tracking my lagers. Knowing when I've hit about 50% attenuation is yuge for starting the ramp up for my diacetyl rest.

THIS year I’m going to make it again, and then I’m going to make a version that is aged with brett. I’m going to call it Gwen Saisony’s boy friend”. Should be funky as fuck! 🎉🎉🎉

I made a strawberry lemonade IPA 2 summers ago. We used 112 lemons zest in the boil and about 5 pounds of strawberry puree the after a week and a half of fermentation and the fruit flavor got fermented out :/

Why would you put in a whole pound of white sugar? It should be malt extract which is the right sugar for beer. Anyone can mix in sugar, yeast, and water. That would disgust a German for sure.

If the keg is cold, no further fermentation will occur so there should be no worries there.
