    Whats the legalities of making rum via distillation here in the UK?

      You need a licence to legally distill. You can make a wash perfectly legally.

    Molasses Sugar?....Can't find in the US. Is Dark Brown Sugar the same?

      No sorry it’s not the same, not that we’re aware of. It’s a blend of sugar and molasses which is richer in molasses than dark brown sugar

    Hello, my question is do you need to have a certain pH for the water for the sugar wash?

      Possibly, it's not something that we've looked into though.

      Yes, 5.2 is ideal.

      Down to 4.7 on the low end is fine with 5.2 being ideal and I wouldn't go much higher than that. When unbuffered, pH can have wild swings in acid/base concentration at neutral pH of 7 due to just the water's natural concentration of hydronium/hydroxide and pH being on a logarithmic scale. A pH buffer changes all that. Drop in some lemon juice or citric acid to get it where you want it and call it good. The yeast is fine being off a few tenths.
