Beets 101-How to Freeze Beets

  • This is a video demonstration of how to freeze fresh beets. It's certainly not hard, but does take some effort. The steps are outlined below.

    Steps to freeze fresh beets:
    1. Cut off the stems, leaving about 2 inches attached to the beet. Do not cut off the tap root.
    2. Wash the beets, and do not peel them.
    3. Put your washed beets in a pot and cover them with water, like you would boil a whole potato.
    4. Boil the beets until they are tender, until a sharp knife can be easily inserted into the beet.
    5. Transfer the beets from the boiling water to a bowl of cold water. Allow them to stay there until they are completely cooled.
    6. Remove the beets from the cold water and place them on a cutting board or plate (a plate may be preferred since the beets may stain a cutting board).
    7. Cut off the stems and tap root. Remove the skin, either with a paring knife, or by gently rubbing the beet with your fingers.
    8. Cut the beets into desired size pieces and lay them so they don’t overlap on a parchment paper-lined tray or baking sheet.
    9. Place the tray in the freezer and allow the beets to freeze. This may take about an hour.
    10. Transfer the frozen beets to a freezer bag or container. Label them with the current date and use them within one year, for best quality. They will be edible beyond that, but the quality may deteriorate.

    Thanks so much for this, I grew beets for the first time this year and didn’t know how to store them. Could they just be blanched and then cooked when I’m ready to use them?

      Hi Sandy! Thanks for watching and asking! Your beets are starting to age and need to be used or preserved immediately. If they are REALLY soft, smell bad, or show signs of mold, it's probably best to toss them, unfortunately. Act fast!! I hope this helps. Take care :)

    If I wanted to make Havard style beets from these frozen beets how would you
    do it?

      Hi Chris! I have not done this, but I would cook them the same way you would when using canned beets. I would thaw the frozen beets first under running water, then drain them. This would allow them to cook up easier in the sauce. Also, they may need to cook just a bit longer than if canned beets were used. I hope this helps! Thanks for watching :)

    Hi Judi. I juice my beets. Will it hurt the juicing process if I blanch them before I vacuum seal and freeze them?

      Hi Malcom! I have not tried juicing frozen vegetables of any type. Any juicing I've done was all with fresh fruits and vegetables. From your question, it sounds like you're already juicing frozen beets. Blanching them first before freezing will help them to keep longer in the freezer, with a better quality. Since they will have been slightly cooked (through blanching), it may actually make them easier to juice, possibly yielding more juice. I can't swear by that since I haven't done it, but I speculate that will be the case. At any rate, I doubt it will hurt the juicing process. If you're looking for "live" enzymes in your beets to be in your juice, juicing them fresh would be best. There will still be SOME enzyme activity if they are frozen withing being blanched. But blanching itself will stop any enzyme activity. Which way you go will be your choice. I hope this helps. Thanks for watching and asking. Best wishes to you :)

    Do you know can you steam instead of boil? I am trying to maintain as much of the nutrients as possible. Many thanks.

    Can't they be frozen raw and if cook, can't they be peeled before you cook them?
    It only takes a few hours for the leaves to wilt, doesn't affect the beet itself. So unless you tend on eating the leaves, all good.. bit of dirts not going to kill us. I grow my own organically, or buy organic

      Hi Karen! If preferred, beets can be frozen without blanching first. However, it's my understanding that they will have a better quality if cut first (sliced, diced, or grated) rather than being frozen whole, before being frozen. Yes, beets can be peeled before they are cooked. This would be especially helpful if you are roasting them. Good for you for growing your own beets!! Thanks for watching and sharing :)

      Hi Pedro! Yes, I froze them on the tray. After they froze, they were transferred to a freezer bag and returned to the freezer. Thanks for watching and asking!!

    Can you pickle them after they have been frozen?

      Hi! That's an excellent question! It's my understanding that SOME foods that have been frozen can still be pickled. Since I have not done this, I can't say for sure about beets. It's worth a try, though. I would start with a very small amount, just as an experiment to see if it works. Then you'll know for sure without sacrificing too many if they don't turn out well. If they do turn out well, then you could do whatever size batch you want! Go for it :) Thanks for watching and asking :)

    Can you freeze whole cooked beets?

      I don't see why not. Being whole, they will take a lot longer to thaw out when reheating them, vs sliced beets. But it should still be do-able. I hope this helps! Thanks for watching!
