  • Fava beans stew (Baghali Ghatogh) is a popular dish from northern Iran, made with cooked fava beans, fresh or dried dill, garlic and eggs. It's typically served with Iranian rice or kateh. This stew is a very simple and delicious dish that can be quickly cooked with these limited ingredients.
    In northern Iran, this stew is cooked with a type of bean known as "Pach baghala". Similar to these beans is the fava beans.
    Suggestion:
    - In this dish, you can use various types of pickles
    - Adding pepper is optional.
    Ingredients (for 4 people):
    - 2 cups of shelled fava beans
    - 1 bunch of fresh or dried dill
    - 4 eggs
    - 2 cloves of garlic, minced
    - 2 tablespoons of vegetable oil
    - Salt to taste
    - 1 teaspoon of ground turmeric
