  • Try this recipe chock full of vegetables, protein, and flavor! I find if you have a flavorful sauce, you don't need all the breading and frying to have a delicious dish. It also helps to add flavor to vegetables making it easier to get more vegetables into your diet. Making a habit of eating protein and lots of vegetables without a lot of fat, breading, and heavy sauces will put you on the right path for your fitness journey.

    RECIPE
    Feel free to modify this recipe to suit your tastes or dietary needs!
    Ingredients:
    1 Tablespoon olive oil
    1 Tablespoon sesame oil
    Salt and pepper to taste
    Vegetables: You can use any you like! I used
    1 zucchini,
    2 carrots,
    1 red bell pepper, and
    2 celery stalks
    Protein:
    2 chicken breasts, OR 4 chicken thighs, OR substitute tofu for a vegetarian option
    ½ teaspoon garlic powder
    ½ teaspoon onion powder
    Salt and pepper to taste
    Starch:
    1 cup dry
    Brown rice OR
    White rice OR
    1 to 2 cups
    Cauliflower rice
    Sauce:
    2 oranges (zest and juice)
    3 gloves garlic or ½ teaspoon dry garlic powder
    1 med piece of ginger or ¼ teaspoon dry ginger powder
    2 Tablespoons rice or white vinegar
    2 Tablespoons soy sauce
    ¼ red chili flakes or to taste
    2 Tablespoons brown sugar
    1 Tablespoon cornstarch
    ~Prep
    *Clean and chop your vegetables of choice
    *Zest and juice your oranges
    *Grate your ginger if you're going to use fresh
    *Finley chop or crush the garlic
    ~Get your rice going because it takes about 1/2 an hour. The ratio is one part rice to two parts water or broth. I like to have leftover rice, so I used 1 cup of rice and two cups of water
    *Combine 1 cup rice and 2 cups water in a pan and bring to a boil
    *Turn down the heat and simmer for about 5 minutes
    *Turn down the heat a little more, cover and cook for about 25 minutes
    *If you choose cauliflower rice, add the amount you want into a saucepan, add a little water or broth, some salt and pepper, and heat on low heat
    *Sauté vegetables in 1 Tablespoon of olive oil and 1 Tablespoon of sesame oil
    ~I recommend cooking them so they still are a little bit firm
    *Remove from pan and set aside
    *Cook the chicken or tofu in the same pan and the same oil
    *Remove from the pan and set aside
    *Deglaze the pan with a little bit of the orange juice then add all the ingredients for the sauce except the orange zest
    *Cook for a few minutes until it thickens a little, add the orange zest, add in the vegetables and chicken, let it cook for a few minutes so the flavors blend, and then serve with rice or cauliflower rice.

    Looks delicious! And thanks for telling us that you don’t need to peel ginger before grating it. I never knew that. And that centerpiece, OMG! Maybe my all-time favorite. So appreciate the ideas.💕

      Orange sauce is one of my favorites:). And yay on the centerpiece! I reminded myself how beautiful and easy it is to float flowers. I am going to make a video for next week.

I've always wanted to learn how to make orange chicken and this recipe looks so easy and delicious. Thank you! I'll have to try the gin & cranberry juice cocktail also! ;-)
