At first I want to clear that sorrel and hibiscus are not the same. In Bangladesh it's popular too, it called chukai or meshot. My mother used to make jam with sorrel. In the summer she used to cook it. She never added sugar(she added salt and some other spices). Because it tastes sour, so a very refreshing drink for the hot weather.

You can use the squeesed out flesh as a meat substitute for meat in vegan dishes. They do it in mexico.
