SCRUMPTIOUS PUMPKIN SQUARES: Easier Than Pumpkin Pie/Perfect for Holiday Gatherings

- These Pumpkin Squares are absolutely SCRUMPTIOUS, and they're so easy to make...they're definitely easier than pumpkin pie. So with Thanksgiving coming up, this simple recipe is perfect. It comes to you courtesy of my nextdoor neighbor, Traci, who is a tremendous cook and baker. She makes all kinds of goodies from scratch, but with the busyness of the holiday season, I asked her to share something simple that anyone can make. And these pumpkin squares are the result of that! Read on for the recipe.
Pumpkin Squares
1 (12oz.) can evaporated milk
3 eggs
2 tsp. pumpkin pie spice
1/2 tsp. salt
1 cup sugar
1 (1lb.13oz. which is the same as 29oz.) can pure pumpkin (Not pie filling)
1 box yellow or vanilla cake mix
3/4 cup butter
1 cup chopped pecans or sliced almonds
Preheat oven to 350º
In large bowl, mix together evaporated milk, eggs, pumpkin pie spice, salt, sugar and pumpkin pureé until smooth. Pour pumpkin mixture into a 9x13" baking dish. Pour dry cake mix on top of pumpkin mixture as evenly as possible, ensuring that all of it is covered. Either melt the butter and pour it on top, OR cut butter into small pieces and lay them on top, spreading them out as evenly as possible across the surface of baking dish. Bake for 25 minutes. Remove from oven and sprinkle with chopped nuts. Return to oven and bake an additional 25 minutes. Remove from oven and allow to cool completely before cutting into squares.

Yummy. Great alternative to a pumpkin pie. I have a son who just eats the filling. I bet this would also be great using a spice cake.

I made this today and it is very yummy! I did however notice that the written instructions says to use a 13oz can of pumpkin and in the verbal instructions it was said to use a large can. The large is 29oz which is what was used in the video. The 13 must be a typo. This is the fourth recipe that I have used and all have been great!
Sorry about that. It should have read 1lb. 13oz., which is 29oz. It's definitely the larger can. I'll go back in and fix that. Thank you for bringing that to my attention.

You will love them. In fact, my husband said he liked them more than pumpkin pie. If you are able, make them the day before so they set completely before you cut into them.

They really are scrumptious. They don't have a crust on bottom, but the crumbly crust they form on top is so much tastier. Just make sure they cool completely before cutting so they hold their shape.

I actually like that the mistake was made. Because I would do that, but now I know what to do
No kidding! It's from trial and error that I've learned a lot from.
Changed it up a bit. Made them in mini Bundt pans so I can add the nuts to the separate pan for my grandson. Adjusting the timer as well.
Well, that was a total fail. It’s chicken food in the morning. I think it may have worked better with the cake mix in the batter.
Just made and took out of the oven. I don't bake much but, even though I spread the cake mix evenly, a lot of the crust remained (unbaked?) When it cools I'll give it a taste.
The crust is supposed to be uneven and crumbly in parts. I hope you enjoyed it.
